Thank you, I learn couples of points. 1. start the fire from 1 size to heat up, then move to another size. 2. Pre-heat the wood for cook pizza. 3. Leave the pizza staying for the original place you put in.

Really great video!! I've just completed my oven. Watched lots of how to build it but none on how to cook a pizza in it. First night I used it invited the whole family over. Pizzas was a disaster. But, everyone still had great fun! You just taught me all the mistakes I made! Can't wait till Friday night to have another go at it! Thanks again!!

I remember when I did that. Nothing went right for me, i had about 10 people over & ended up buying pizza, lol. Honestly, it took me about 20 pizza's before I got everything to pizzeria quality. Now, people that come over ask "you gonna make pizza, right".

Same my son had a party with his mates and I didnt get it hot enough, and didn't flour the pizza peel enough and pizzas ended up a mess in the oven! A few more attempts and all 👍. Great helpful video

If you're a terrible cook, I'd say try the oven out before the party, not try it during the party. Can take some figuring out how to hit right temps and making a good pizza. Don't let your guests walk away saying your pizza party was a shambles. 😄

It was too got because you put a fresh log onto the fire just as you began your pizza. There should be no flames when your cooking just red hot coals

Yes only need flame for Neapolitan pizza if you want a 90 second pizza. I agree hot coals are fine for other pizza styles.

Hey thanks to this video we have amazing first pizza day in our new oven we follow your steps amd all came to plan . I think is important to mentioned that the oven provably will be good idea to cure it before using it for first time by light fire 2 or 3 times at not extremely hot temp. We notice that took really long to get white dome however the weather was really low here in the uk so the conclusion is if you using the oven in the winter provably need start the fire 4 hours on advance if is summer 2 hours like this video . Thanks a lot 👍👍👍

Yes you are correct, it doesnt get that cold in Australia but a good point if the oven hasnt ben used for a long time.

Just picked myself up a pizza oven from Bunnings for 1000 bucks. I’ve cooked four pizzas in there and have all taste better than your average franchise shop down the street. I have always had my flames to the back, but it makes much more sense having the flames on either side, and I’ve learnt that when it’s ready to cook the dough more then go white. Keen to try this this evening

I'd love a wood fired oven but it seems too much hassle for such a quick cook. Wouldn't you get the same results with a pizza stone on a bbq? Great video though. Very informative.

Hi Guy, BBQ stone is fine and you can get good results but a good wood fired oven is designed to get up to 500 Celsius so you can cook a Neopolitan style pizza in 90 seconds. The Alfa stainless steel pizza ovens are also a good choice, they heat up quick and use minimal amounts of wood if you want that authentic taste.

Australia will probably do the same one day. The gas fired pizza ovens are very good as well although wood fired is still unbeatable.

Hi and thanks. The peel I was using you cant get anymore but the Chinese made anodised aluminium perforated peels are very good and you can find them online. The italian made GiMetal and Regina tools are top quality but very expensive.

Yes you would need to cook a few pizzas or other dishes to get value. This is why I also have stainless steel wood pizza ovens and gas pizza ovens. These are perfect for a quick cook and you will get the same results.

Hi, if you don’t use the oven often, yes start with 2 or 4 logs and heat up slowly. If you use monthly or so then stack 4 or 6 if it fits. Regards Rob.

Hi, you only cool it down if it’s too hot for cooking on. You also use the damp rag to clean off the ash. I hope that helps.

Thanks. The floor is 50mm thick refractory brick tiles. Refractory floors are the best to maintain a constant heat.

Hi, after you have cured and sealed the oven, build a good hot fire on the floor and then spread the coals. This will help clean the floor, then push the fire aside and clean the floor with a damp cloth like I do in the video. I always use raw dough cooked on the floor. Enjoy.

Hi, depends on the size of the oven and the type of wood used. Usually takes 1.5 to 2 hrs with good dry hardwood.

Hi, in Australia we generally recommend red gum because it doesnt leave behind much ash but any un-treated hardwood is ok.

Terrific. Thanks. Long after we've had an oven (for both bread & pizza) I'm just going through vids now for tips and tricks. I've used a mop to clean but like your using peel & wet rag better! Also, looks like most folks have fire to side -- another good hint! I've always had it in back but will try side now. But, I like the floor a little hotter for a crisper crust then, at the end, raise the pizza to dome for ~10 seconds or so to crisp it up and get even melting to cheese. Thanks again!

The temperature you talked about, is it in Fahrenheit or Celsius? Could you cut the pizza and show us the cross section and the crispy crust hold

H, the temperature is in Celsius. Yes I show the cut of the crust in other videos, this video was more about the oven and not the pizza. Thanks for your comment.

Great video - I follow all the steps in my oven (Calabrese Entertainer - installed Dec 2021, Sydney, cured twice and full fire twice) but no matter how long I fire it I can’t get the floor to reach a temperature higher than 230c (though the dome will get to 477c and turn white). Even when I test the temperature of the floor immediately after moving the fire it’s not higher than 230c, and there is very little heat retention after. Dome also turns black shortly after the flames die down. I am using double split iron bark, firing time of at least 3hrs. Any ideas what it could be / I am doing wrong?

Hi, if there is a gap or crack at the bottom of the oven where the render meets the slab, water can get in under the oven and soak the insulation board. If this happens it will be impossible to get the floor hot. If this is the case, you need to completely dry the oven out again and then silicone or seal the bottom of the oven so water can’t get back in. I hope this helps.

@@garypic4083 i assume the pizza you eat is cheap slop. if you make your own you might be suprised what real pizza tastes like when you use fresh ingrediants on a dough with very little yest.

Fantastic video. I’m staying in an air bnb that has an oven similar to yours an am going to use it tonight. I love my gas pizza oven and am excited to try my hand at wood!

Hello! I recently purchased a new home in New Mexico and the former owner built an outdoor Pizza Oven! Based upon looking at the size of your oven, mine is 2X-3X larger. I'm hoping you can answer some questions for me!: 1. Since it probably hasn't been used in a while, do you recommend a pre-burn/heat before actually cooking anything? 2. What type of wood do you typically use? 3. Considering my oven is much larger, how much longer do you think I need to prep it for cooking? 4. Do you ever cook other types of foods (i.e., steaks, chicken, etc.) and if so, do you have videos on those cookings? Thank you!

Hello. Yes it’s best to fire it up slowly, look at my how to maintain and cure an oven video on my Chanel. In Australia we use red-gum so you need to look for a dry hardwood or compressed logs in your area. Bigger ovens use more wood and a bigger fire so they should heat up around the same amount of time, maybe 2 hrs or so. When the soot burns off and the inside turns white or back to its original colour, your floor should be around 750f. Look at my Chanel for other cooking videos and look after your floor, don’t let it build up in fat etc. I hope this helps.

great video! what do you do once you're done baking pizzas, do you let the fire burn out? Any tips on cleaning up the over afterwards? Thanks!

Hi Marcel, when you're done spread the hot coals over the floor where there are stains etc. and leave the door off until the wood burns out. This will help clean the floor and you can then use a wire brush while the floor is still hot if required.
