I did not know how great carrot leafs etc were so good for you. I have just used them all my life, in fresh veg soup. When my mother had no other foods to feed us, she gathered all the greens form the garden and made us a green veg soup, we were always health. I have kept doing it for over 60 yrs. my doctor is so amazed at how healthy I am, compared to other people my age! I’m thinking it’s all the greens I eat all summer and dehydrate what I can’t eat so I have some for the winter months! It’s nice to know they really are very healthy for you!

I dehydrated all the leaves of the plants that grow underground except potatoes, but everything like, carrots, beets, turnips, etc etc. if in dought research! Been eating my garden greens all winter that I dehydrated. Good in soups, stews, gravy’s, breads etc! I never cook mine first I just use them sparingly!
