Big Pond Farm Carrot Top Pesto
4 cups Carrot tops tightly packed (6 cups loosely packed)
2 cloves Garlic
1/3 cup Olive Oil
2 Tablespoons Lemon Juice
1/4 teaspoon Salt
1 cup Asiago or Parmesan Cheese
2 to 3 oz Nuts (Pine nuts, Pecans, Walnuts) Choose what you like.
Add Garlic to your food processor or blender and chop. Then add your Carrot tops, Lemon Juice, and Salt and blend. While blending, slowly pour in Olive Oil and continue blending until combined. Open lid and scrape down sides, add Cheese and nuts. Blend until smooth. Once the Pesto is to the texture of your liking taste your pesto and see if it needs any additional salt and salt to taste.
Now enjoy it on whatever you like: Pasta, Sandwiches, Pizza, Veggies, or eat it by the spoonful!

Ha!Perfect!I had just made a comment to"Whimsical Wonder Farms about setting priorities as I get older.Even young folk have to do that! I was just talking the other day to a 21yr old grandson about working hard,but working smart so you don't hurt your body and pay for it when you're old,like me.

My Dad says the same thing: Says his mom used to tell him, "Son, you need to slow down. You're gonna pay for working so hard when you're older." He tells me regularly, "I shoulda listened to Mom." :)

inderwink it is great to have a good work ethic but I know from experience that you can't do everything. One quote that we always come back to is "You can do anything you want to do in life but you can't do everything you want to do."

What a beautiful garden, complete with the background melody of farm creatures busy with another day . A trip back to yesteryear when life seemed so predictable. After all, animals and gardens are not concerned with what day of the week it was. Their needs came first. So nice to see someone young like you and your family that take on the challenge of growing produce when mother nature does not always cooperate. Great video, thank you.

Well let us add one more new title to Lacie... Lacie Stewart! I love this recipe. I never knew you could do so many things with carrot tops. I have never been so excited about carrot tops in my life. And mixing it with chicken and or pasta like that looks delicious. Thanks for so much information and new ideas in this video! Journey On!

Agreed... I have heard Joel Salatin talk about that and the Bible mentions that too. Our first year on the farm consisted of adjusting to life in the yurt and living on a new property. I will keep the 7 year plan in mind for when I get down. Thanks for commenting and for watching.

And i wouldn't try to compare yourself to much, your on a whole different awesome category than Curtis or any of the other's i keep up with. But just remember your doing something much better with your life than most of the human race. If more people would follow your path in the slightest direction we would be seeing a much more beautiful earth than what we are today.

don't be discouraged about being behind, you're doing fine. you guys will get there. look at the other farms as an inspiration for you. I love to visit other farms from time to time to learn and to share.

We also like to visit other farms. When we visited Rose Creek Farms last Fall it was a huge inspiration for us to see in person exactly what their operation looked like. This year has already been so much better than last year. Thanks for the encouragement!

I think a fella named Charles Dowding would really give you some other great information. He grows beautiful stuff in England, on a no till compost only garden. He is fun to watch. Good luck

I love garlic, but not fond of onions. I can tolerate them if they are chopped up finely and cooked to death! ;-) I'm anosmic (can't smell) so texture dictates a lot of my food preferences. And yes, I can taste my food. I just don't get the olfactory sensations "smellers" get. BTW, great video! LOL, more, more, more!
