Haha! I actually made this marinade the day before yesterday and soaked pork overnight. So I was pleasantly surprised that your video appeared on my KZbin channel this morning (2 days after I made the miso pork). I like the miso niku over tofu and will definitely try that. We Chinese use something similar called black bean sauce which sometimes has garlic mixed in already. I have used it in combination with miso. Miso has such an amazing flavor. And your miso chicken looks so yummy. I will try that next. Thank you for sharing.

Thank you for your comment! Yeah miso is great and there are so many ways to cook delicious food with it! Let me know if you have any other Japanese ingredients that you’re interested in using but are unsure how to use them :)

@ The good news is that I’m married to a Japanese gal from Shizuoka. 😊 She is a good cook but likes to follow exact recipe from cookbook. I like to watch videos and get ideas from people like you and then do my own thing. We both enjoy each other’s cooking.

Just made the Niku Miso and it is so delicious😋🔥👍 Ground beef works too and I just mixed the sauce straight in the pan, aswell as using fresh ground ginger and skipping the sake because I don't have these specific ingredients at home. Still very tasty though👌
Nice work here! Inspired me to use some miso paste!

what can be the substitute for sake on the ground pork miso? also how will it taste without sake? 🤔
@chibichibichef2 жыл бұрын
Thank you for watching! If you don’t want to add sake, it’s fine and you can ignore it or white wine will be good. The sake will help to neutralize the smell of meat and add some richness and umami but it can be optional. If the pork miso taste is too strong without the sake, add a little more water.

What to replace sake (alcohol) with? Alcohol free sake and mirin?
@chibichibichef10 ай бұрын
Thank you for watching! For these recipes, I use sake for eliminating the smell of meat and bringing out the dish’s mild umami, and making the sauce more consistent and less solidified. So if you don’t have or want to use sake, it won’t taste the same from the original recipe, but you can use more mirin + a little bit of water + less sugar (from the recipe). Mirin will make the dishes sweeter, so be careful using it too much. Also a lot of Japanese cook the sake well to allow the alcohol to evaporate when they cook for kids and for people who don’t like alcohol. Hope this tip helps your cooking!

@@chibichibichef Thanks for answer, think i will try with alkoholfree sake (Amazake Yuzu?) and mirin first

@chibichibichef2 жыл бұрын
Thank you for watching Volume 1! I hope to make Volume 2 in the near future! Which miso are you interested in? White, yellow or red?
@Finn9592 жыл бұрын
@@chibichibichef i only have the yellow miso at home but want to buy the red or the very dark brown miso to try it out. Maybe you could also tell us how to recognize good quality miso. I heard if alcohol is listed in the ingredients it is low quality and maybe not properly fermented. Is this true? How do you choose your miso?
@chibichibichef2 жыл бұрын
@@Finn959 Sounds great! I’ll create a video for red miso sometime soon:) Wow you know well about miso! Even though the miso contains alcohol, I don’t think it doesn’t mean it’s low quality, but I prefer the miso without alcohol because it’s more natural and flavorful, but they might be more expensive and have a shorter best-before date. I like Hikari Miso brand since they have a lot of organic and additive-free miso kinds!

Background music is distructing, unfitting and unnecessary because it renders useless the voice over since its louder than the voice..... Voice is inaudible or made unclear by the music.... Musi is pain in the ears because of high treble tone....
