No need to enter sampling mode. Just hold 'Screen' button and press '1'.

Wow you gotta be kidding me! I thought I read all the microphone info in the guide but I somehow missed the 'input selection' section. Thanks for pointing this out, it's a much easier method!

Is it possible record onto a track on the OP-Z instead of into a DAW?

Sadly not at the moment, apart from using up sample slots that are only 12 seconds each I believe.
