You should only ever pour structural grout from one corner. It allows the air pockets under that I-beam to flow from underneath to the other side. If you pour from each side and every corner, it allows airpockets to form in the middle when each pour of grout meets together under the beam.

Why doesnt the structural steel just sit on a pre levelled padstone? Is this this just to infil the top of the padstone to the underside of structural steel when a padstone height couldnt be determined early on?

Just out of interest, was your farther a carpenter? There is a product similar called conbextra we use for underpinning , no shrinkage
