Is it safe to use this as a Battery Maintainer for Programming a car? Specifically, in long sessions of Programable Module Installations via J2534-2 Passthrough Device?

I used this mode to wake up my dead agm, the override function didn't work.

This may sound like a foolish question, but: What is the max constant current that this device can supply when in supply mode? Is it 25 A? Or is it a lower value?

Not a foolish question at all! The 12V Supply and 24V Supply Modes on the GENIUSPRO25 supply 25A and 12.5A max respectively. The 12V Supply and 24V Supply Modes on the GENIUSPRO50 supply 50A and 25A max respectively.
