In espresso machines you need a specific water to mineral ratio, to both avoid scale buildup in the machine and provide the best tasting coffee. Usually this is in the form of buying distilled water and remineralization packets to get your water to the right levels.

I use a very specific water (alkaline) for my coffee machine, but they probably just advise to not use hard water to avoid problems with the pump and calcification.
