we got a similar machine but with auto pasteurization. we are having issues with leaving dark flecks in the chocolate. any ideas?

You'll want to check the cylinder evaporator sensor. The service manual for your machine's model should be available; if not, you can contact Carpigiani directly.

My machine is struck in clean me mode. I have taken apart and cleaned so thoroughly so many times I am out of ideas. Anybody have an idea of what step I am missing.
