How You Can grill A Perfect Steak Every Time | Ninja Woodfire Grill
In this video you will see how easy it is to use a Ninja Woodfire Outside Grill.
It's a choice steak with some pretty good marbling on it but it’s a little wet because I just took it out of the refrigerator. Anytime you are wanting to get a good sear on meat, moisture on the meat is your big enemy.
So we are going to pat this dry before we apply our seasoning. The reason for this is because if there's moisture on the outside of the steak the only thing that's going to happen when you put it on your hot Grill is it's going to sizzle - and that steams the moisture away - instead of creating your wonderful crust that you're wanting - so we are going to get this really dry.
Our wood fire grill is set to 120C. We're going to go with a SMOKE and we’re going to smoke it at this low temperature until it comes up to about 54C (128F) - then we'll let it rest until it hits 57C (135F).
That should have it cooked perfectly nice medium. Then we're going to sear it on the GRILL setting (HI) - to get a nice crust.
Let’s season this steak up. We're going to keep it simple we’re going to go with some salt, some black pepper and some garlic powder and onion powder. Don't forget the sides and the edges press it in there a little.
I am actually using my digital wireless thermometer.
The New York Strip is now added to the grill with the lid closed.Are you ready? The magic is about to happen.
We'll set up our SMOKER setting.We’re going to fill the basket with hickory pellets, then hit that wood fire flavour button and START.
We’re going to set it to 120C degrees for 60 minutes.
We are not cooking by time - we are going by internal temperature.When we reach half way to cook time on the thermometer we shall FLIP the New York Strips.
We’re going to pull the New York Strip at about 54C (128F).

In the video you said the smoke time was 20 minutes. In the transcript you wrote 60 minutes. Please advise.

Tried this and it came out a little overdone but I think that was my fault for smoking too long. I found it wasn’t on the grill very long to get a good sear, the temp was already around 54c from the smoking when I added it to the grill and then I was meant to take off at around the same temperature. Did I do something wrong?

Very interesting, I'll try it. I must say that steak is the one thing that the ninja wfg doesn't do well. IMHO it doesn't get anywhere near hot enough if you like your steak rare. It's a great little grill for everything else, but so far my ribeyes have been very disappointing for someone who traditionally pan sears them. Thanks for the tip, I'll keep trying. Looks like a digital thermometer is next, sigh!

Your looking for more of the Millard reaction. What I recommend is getting the griddle pan so you have more surface area just like your pan. Set the smoker to 175°F and smoke for about 45 min. This will leave the steak raw inside and leathered outside. Pull the steak out and set mode to Grill high and allow preheat. Cook by Internal temp or 3 min per side and pull it. You'll get a better result.
