Using money as a measurement is unsanitary. Instead, just stack two metal spoons and use the end handle of the two as your 3-5mm guide. Alternatively just use the money method next to another item that is common in your kitchen, and then remember then sanitize that before using it as a measurement (then just remember that thing in the future - or write it into your pie recipe for future reference.)

It is better to use another pie dish on top of the parchment when cooking the bottom crust instead of wasting rice like that. These people must be rich to waste food like that.

@@malenotyalc you can still use the rice after. Or just have a glass full to keep it for just this reason. I have a glass of dry peas for blind baking in the cabinet all the time.

Blind bake for 13 minutes for your golden brown base. Surely the rim of the partially baked pie bottom is also partially baked so how do you attach and seal fresh pastry to a partially baked crust. I've never seen a BBC TV chief / baker do this. I wonder what Mary Berry would say?
