Hey Malcom, I tried this recipe over the weekend and loved it! The next day, my wife created pulled-beef tacos using the leftover meat and your mayo concoction (added Carolina Reaper dipping sauce packet) mixed into some slaw and served on flour tortillas and I cannot stress to you how awesome they were.

Thanks for the recipe Malcom. I just did 2 chucks today on the offset. I wrapped one and did the beef broth in a tray for the other. Pulled them both off the smoker for resting when the wrapped one hit 191 for slicing, the one in the tray was at 205, perfect for pulling. Both were ridiculously moist with a big ol fat smoke ring. Crazy flavorful. Thank you!

I did this with 2 different seasonings. Wrapped and braised in beer for 5 hours after 3 hrs of smoke. Malcolm you are the best!

Did this last weekend. Fantastic. The only change I made was to cut up some onions and garlic to put in the beef stock. Then reduced it down and made an au jus out of it. Thanks for the recipe !!!

If you add some balsamic vinegar to the caramelized onions, melt some swiss over the beef, and butter and toast the buns, I promise you will have the best sandwich in the history of sandwiches. I would bet my heartburn on it.

While searching for a smoked shredded beef recipe, I came across your video. Thank you for posting this! It came out exactly perfect. I used Meat Church's Holy Cow and a nice peppery AP seasoning from my local supermarket. The fam was raving about how good it came out. I had french bread and did it like a french dip sandwich with the jus. Delicious!

I smoked a chuck roast today over mesquite. I ended up pulling it off after 5 hours (it was 2.75 lbs) at 200°. I injected it with a mix of beef broth, melted butter, garlic powder, and Worcestershire. I'm letting rest wrapped up in foil in a cooler.

In Baltimore, we call that horseradish and mayo combo Tiger Sauce. Not to be confused with the pepper sauce version. Goes great on pit beef sandwiches as well. Great recipe, Malcom.

Nice job Malcom. The Chuck Roast has recently been my go to cook on my Pit Barrel Cooker. Usually a lot of leftovers for beef soft tacos. I just add onions, red peppers and Jalapeno.... and the horseradish too. I'm new at this and I really appreciate your quality videos!!!

Oddly enough my business partner and me only just recently considered using chuck roast, as an alternative to brisket. I love it! Absolutely! It has the fat content to sustain a low n slow cook, ends up being juicy and tender....I just think it s a cut of meat that's been waiting in the wings for it s day to shine like brisket!!!.....Oh... cheaper per lb. as well!

Tried this recipe on my Yoder today hoping it would turn out as good as Malcom's. Only my 3rd cook on it so I'm still learning the ropes. I hit all of the target temps & thought I was in the clear, but I think I purchased a chuck roast that looked good in the package, but had a lot of sinew that was not visible. The meat didn't pull apart like it should, tasted overly strong, and wasn't as tender as it should have been. The onions were out of sight. This recipe is still a keeper & Malcom is still the man when it comes to smoking!

Gotta try this!! I've smoked the ribs and the boston butt using your recipe and blew away my family. But today I have just received my 6.2 oz bottle of The Bbq Rub. Its really about to get good now. Hey bro... this recipe was nice. You'd think it would be tough but it actually comes out tender. Great recipe for when this is on sale. Only thing I did differently was use your "The BBQ Rub" and a little Montreal steak seasoning. Smoked it a little slower too at 225 since my cut was really small.

Hey Malcom... Having a big party for my daughters graduation in June and I am making a few briskets and some pulled pork.... I saw this video and was inspired to make pulled brisket just to make my life easier on that day... No slicing..LOL I usually follow your easy brisket video to do brisket... What would i have to adjust to make that brisket pull like this ? I assume longer and maybe broth when i wrap... Any idea how much longer? Maybe you can make a video... :) or better yet come help me cook...

Made this Sunday as per the video with a Prime Grade chuck from Costco and used some post oak for flavor,the result was fall apart tender even though I fell asleep.When I woke up my Therma-Pen Smoke was beeping as the I/T was 209*,thankfully chuck is very forgiving.Next time will add some shrooms to the home made beef stock and maybe onions and garlic.Oh yea I used my Pit Barrel Cooker 205-275*.
