I was taught to do this with cooking, if you aren't sure whether to add a spice or ingredient, sniff both, see if it blends well. Doing it with alcohol seems natural

I do that nose thing when cooking. I've got a HUGE assortment of spices, condiments, vinegars, and herbs. When I'm just not sure why a dish isn't coming together, I'll open every bottle and jar I have , and smell them. Sometimes a dish needs that kinda dusty spice that black pepper can have. Or maybe a brighter heat from aleppo pepper. I've got a few containers of JUST black pepper from different brands. Some lean towards basil, or even anise. Some have a citrusy pop to them.

I love how you apply your vast experience and knowledge without coming off as snobbish or better-than-thou. 10:14 that's exactly how I decide on flavour combinations as well! I've used it both for spices and for cocktails. It's how I came up with my "raspberry gin cosmo" which is mostly just gin and raspberry cordial/syrup.

I mean, how else would you try out flavour combinations? Actually mixing a small sample of everything you want to try would be very wasteful, and still you can't as easily find the correct balance as you can with the dual smelling technique. (If one smell is too dominant, just move that away from your nose a bit, and if that fixes it, you know you must add very little of that element.

For the "A Night in Tunisia" drink, grated hazelnut or grated nutmeg in place of the cocoa powder, both work wonderfully, both are amazingly aromatic atop the drink and really elevate it.

What you do is you cook the the creme de menthe and creme de cacao towards the end of the summer for a few minutes. And then you too it off with the peppermint schnapps for cooling. It makes it ten times stronger but sooo much tastier. I make this for my family every Christmas.

This made me think of drink I started making recently for my wife. It’s 2 oz of coffee cold or hot. 3 oz. bailey’s Irish cream. 1 oz amaretto. 3/4 oz bourbon. Shaken over ice. Garnish with a dusting of cinnamon or chocolate. Add a few dashes of bourbon barrel aged cherry bitters on top. You could easily add peppermint to this drink. I bet you could crush mint candies on top. I hope you try this drink.

The Almond wallop reminds me of a drink that I think was called a punk monk. Specs were equal parts irish cream, amaretto, and frangelico in coffee, but might work in hot coco. For coco I'd probably drop the amaretto for Mr. Black's.

This was a really cool way of seeing how Greg designs drinks for the special episodes (Star Wars, Game of Thrones, etc.). I'd love to see more like this in the future; might you consider doing something similar using something unusual as the base? Green River Lime Soda is really popular in the Midwest around St. Patrick's Day but the flavor is strong and coming up with things to mix with it can be fun.

When I bar tended in college, for St. Patrick's day we did a shot which was basically these. ~1/2oz peppermint scnhapps, ~1/2oz creme de cacao, 1/4oz green creme de menthe(basically for the color), float bailey's on top. Tasted like mint chocolate chip ice cream.
