Most of the skips in general were patched out of the game completely. Skips such as the coaster skip are only available on old patches of the game.

The trigger is always there, there's just something in the code that causes a survivor to trigger it automatically. Switching to idle really fast tricks the programming into not triggering it. If I recall a finale always requires a survivor to activate some scripted object so this is just a quirk with how they designed this finale to not require that. It still needs to have it somewhere in the level.

The Last Stand update fixed a lot of map exploits, initially also for co-op. They were put back in mostly for speedrunning concerns. So in the end they were only patched out for versus mode, explaining these differences between gamemodes
