I remember as a kid my granny would fry them back bones. If you thru them away she’d knock sparks of our heads. So even today when I’m frying fish for myself I still meal them up and drop em in. I wouldn’t if I had a bunch of guest over but that’s one of the thousands wonderful memories I have with her sitting on them creek banks watching her spit that Levi Garret powdered snuff in that water ! Lol

Growing up in SE Oklahoma, we'd fry up the fish with bones, and it was scary eatin. You'd have to chew and chew to make sure you didn't swallow a bone. Anymore I just filet the fish. I have noticed though, that if you fry the fish with the bones, it tastes better. The bones somehow leach out flavor to the meat when you cook it.

Ah you brought back some fond memories! My brother, and friend I would set fish baskets out on the creek, harvest the catch, and while the gang cleaned fish, the three of us would bait bush hooks, returned to the docks to eat, checked the bush hooks, harvest the fish, reset the baskets, and go home with bellies full of fresh catfish. Repeat on Friday Night! Life was good!

My grandma didn't dip; she smoked Pall Mall reds by the carton and she loved to catch and cook catfish. I don't smoke but I do love catfish the way my grandma cooked it (cornmeal-flour mix and Louisiana Hot Sauce).

My grandad us to do this with cottonseed millcake, ivory soap and corn harded on the cob. He would catch 2-3 hundred and the 4 of us would skin catfish for hours upon hours. Thanks for the reminder of good memories.
