Hi friends, we have been canning up a storm over here over the last few days. We bought 100 lbs or so of peaches and 100 lbs of tomatoes, and a bunch of peppers. We canned salsa, peaches and cowboy candy and ended up with 117 jars by the end of it all. I hope you enjoy coming along with me!

My friend and I in years past would can together, pooling produce and sharing the results. We would can at one house, taking turns heating up our homes and families! 😂 Sometimes we would be busy until the wee hours of the night when it was cooler, children were in bed and we could blitz our efforts. So satisfying to do. I have very fond memories of that time. Enjoyable to watch you at your efforts with so much accomplished.

I am amazed by all you preserve. I canned dill pickles and bread and butter pickles yesterday and I was exhaused. I canned coleslaw last weekend and strawberry rhurbarb jam before that. Tomorrow it is zucchini relish. I have to pace myself these days because I have a very bad back and I am very close to being 78 years old. I love your videos and look forward to each one. Thankyou.

That is called a Lemon Cucumber where we come from. I usually peal & slice them onto a plate, then squeeze a little fresh lemon over them, then a bit of salt & pepper. SO DELICIOUS!! A favorite in our home. Easy to grow & very prolific. Best younger, less seeds.

I’m making the Ball’s Fresh Veggie Salsa today & cutting back on jalapeños also. Dicing up bell peppers to freeze as I watch this video. Busy time indeed here in Ohio also.

I have made salsa without cumin. As long as you’ve got cilantro it’s still very yummy. I did a roasted salsa this year which turned out very good. It’s roots and refuge recipe. You can find her on KZbin

Last year I canned the leftover cowboy candy brine and used it as a meat marinade throughout the year.

Back in the days, my father's family ( lived in the mountains over 1000m above sea level) would use branches with leaves to feed their animals in order to extend the hay. They also grew fodder beets. I hope you got your cumin for the salsa:))))

We were told recently that bee balm attracts bees but does not feed them. So it kind of tricks them .

I love cowboy candy. I run mine in the food processor like I do relish. I love it on every bite of say a hamburg I add a little bit as I go. Then you can use as little or as much as you want.

We are in Northern Michigan, tip of the mitten area, and our drought has hugely affected our local farmers hay production as well. We saw a few farmers that cut for a second time, and literally it looked like if I cut my grass after letting it go for a month. The cutting was pathetic. It may give him one or two round bales to the entire field.😢😢😢

I got the same food processor and I love the dicer that came with. It makes life so much easier. When you said you make your cowboy candy with banana peppers and jalapeños I wanted to yell „me too“. Lol

I grew cucs similar to those and they were lemon cucs. I think they are cute and agree they taste like a regular cuc. I appreciate all you hard work and the videos you provide!!

We make a HUGE batch of Cowboy Candy every September. We have enjoyed ours way more by chopping the peppers finely, with my chopper of course, not by hand given the amount we do. However, we have used our left over brine for subsequent batches as well. Just be warned that the heat/spiciness intensifies when you do. We also can the left over brine to use in marinates for pork and chicken. It is WONDERFUL and if you add just a little, it gives a zing without too much heat. Everything that you're doing looks so fabulous! Good job!

Goodness me, that's a lot of jars!!! And as for the mess- well, I look at it like 'that's a lot of food for this little mess'! A whole year'a food for a little bit of a messy counter :) I hope the kids' candy and fancy pickles work out well!!

Time saver suggestion, use a measuring cup to fill your jars. A 2 cup measuring cup will only require 2 dips in your food to fill a quart instead of a bunch with your ladle.

I have a confession to make. I was so proud that I do not watch any gossipy/drama series because its not my thing. I watch educational videos, such as yours, to better myself and keep my mind on good things. Turns out, I am not that good. All I could think of is: did you find cumin????? Did any of the kiddos find cumin??? Did Dan bought you some?! Where is the CUMIN??? I need the gossip where it was!! :D (Great video, as always. Hugs hugs)

I diced a jalapeno pepper once then rinsed my hands and later rubbed my eye. MY eyes burned for several houses and constant face washes. Jalapeno will stay on your hand through multiple hand washes. I now use surgical type gloves when cutting peppers. I use onions in almost everything I cooks and never have any issues with them at all. I always put the cut surface face down on the cutting board.

In Texas, we eat our Cowboy Candy with the cream cheese on Tortilla chips. The Scoops chips work the best.

ABUNDANCE!! :) Good stuff! Goal this weekend for me is to get my tomatoes jarred up, and then sort the potatoes since they have been aging. I wanted to get more things seeded, but we are going into 100 degree Fahrenheit temps again this coming weekend. Not exactly gonna be fun this late in the season. I just planted hundreds of beans, limas and new zucchini plants this past weekend. I hope they survive. I'd love to see you do a video using one of your celeriac, to get an idea of what to do with it. I bought seeds this year to plant for next year.

I made a batch if cowboy Candy one fall on a day when I didn’t open the windows - Big Huge Mistake, my poor cats I never thought of the smell and vapour . I make it now when I have the windows open . I usually make a quadruple batch .

I got it this year, I’m loving it. It’s just my “size”! I’ve never heard of white jalapeños! I let some of mine go red though. My first year of trying cowboy candy. I live in Princeton. Drought is one issue. The other issue here is with Grasshoppers. They have eaten the fields bare around here.

Sounds mean but fills 5 gallon bucket 1/3 full of water, then float sunflower seeds on the water, lean a board up against the side of the bucket edge and the chipmunks, and mice will go up, lean over the edge and fall in. We were overrun two years ago and it took care of the problem. You do have to reset it often.

At the fire department we would always have fruit flies in the summer. We would use windex on them. They would fall over dead. Yeah!! Hate them. Lol.

We live in W Washington state and this year has been terrible for hay. We got 1/3 of the hay we need for winter and had to go to E Washington and buy hay. It's been so bad we've been having to feed hay already because our fields are brown. We only have 4 cows and a bull but having to feed 3 bales per day already is just awful. Loved watching you make your salsa!! That is my next canning project.

Hi, newbie canner here. When you’ve got so much salsa to can 1) are you filling 6 quarts at a time as you wait for the steam canner to become available and 2) if so. are you keeping the salsa hot in the pot while waiting for batches to complete? I’ve seen other videos where they will fill as many jars as they can even if they can only process 5 to 7 jars at a time. I don’t understand how they’re keeping the filled jars warm for the next batch. Hope that makes sense 😅.

@kellicosner27… That is such an interesting phenomenon to me. My neighbor says he is affected the same way with cilantro. Reading about it, it’s apparently a genetic thing that affects 4 to 14% of the population 🧐. And, as Chelsea says “people seem to either love cilantro or hate it”. I, too, love it & am sooo happy that I don’t have that “soap gene”. I have come to the same place in my Mexican cooking ….some things just don’t taste right without cilantro 🌿

I, too, have the “soap” gene. I distinctly remember that, believe it or not, FIRST taste of fresh cilantro. Over the years the dislike has disappeared, though I undoubtedly taste something very different than most people. I still am cautious what I eat it in, but, being a restaurant cook for several decades, I’ve learned a bunch about how to use cilantro.

I like to take the jalapeño peppers and slice them, then pour dill pickle juice over them. They are so good in anything Mexican. It is the pickle to the taco. They are also good in chili.

Amazing work! How old are your helpers? I do alot of canning but my kiddos are too small to be much help yet! But I love canning and agree with you, it is so rewarding! I did tomato puree today! Tomorrow is faux pineapple!

What do you have the sunflowers planted near and do you find it stunts the growth of anything near it? It can stunt the growth of some things and possibly more then the few known plants. Also with the last recipe you said 1/2 cup of sugar to 1cup vinegar then did 1cup sugar to 1/2cup vinegar

Quick question about your steam canner, I was doing some research and it says that it should have 2 vent holes. Does yours have 1 or 2 vent holes, the one I purchase only has one so now I’m wondering if I should drill a second one which is what is suggested in the video I watch from NDSUextension here on KZbin and they got a grant to experiment with steam canners for safety and comparison with water bath canning. It was really interesting and informative! Love your videos!
