Morning! Or evening, if you're on the other side of the world to me. I hope you are ready to get your bakealong on! This is going to be a Hummingbird Cake. And blow me down with a feather if it isn't the moistest fruitiest cake you'll ever have tasted. I hope you enjoy. #cupcakejemmabakes
SPONGE
250g plain flour
300g caster sugar
1 1/2 tsp cinnamon
3/4 tsp baking soda
3/4 tsp baking powder
1/2 tsp salt
200g vegetable oil
3 eggs
210g mashed banana
320g crushed pineapple
2 tsp vanilla
100g quite finely chopped, toasted pecans
ICING
75g unsalted butter
120g cream cheese
420g icing sugar

100g toasted pecans for decoration
You will also need...
whisk
hand mixer
3x 7” round tins
spatula
palette knife (cranked and flat)
baking tray for toasting nuts
multiple mixing bowls
sieve
measuring spoons
turntable or just a nice plate

This looks amazing. For your Tuesday tips could you do a chocolate tempering one maybe please? I noticed a while ago (around Xmas I think it was) you had some moulded chocolates on a cake etc. Thanks again for all your lovely recipes. I’ve not only made many but so have my daughter and her friend now too! x

you guys can roughly temper your chocolate by only melting two thirds of your total amount and then adding the last third. that is going to leave it nice and shiny and with a nice crack to it after fully drying :)

It's sooo nice of you to use basic methods and tools so that everyone can try them at home. ❤️❤️❤️ E.g the bread knife intead of cake leveler, plate instead of turn tables and so on. You rock Jemma 😍🎂

Great video Jemma! So exciting to hear that you’ll be having a meet and greet unfortunately Im not from London. I actually arranged to fly all the way to London from Singapore for my honeymoon just so that I could visit the shop and hopefully meet you in person. YEAH!!!!

I'm gonna try this recipe but for my own spin i will reduce the fresh pineapple blend to a concentrated fruit puree, this will eliminate most of the natural water in the pineapple as well as produce a more concentrated pineapple flavor. Also this will give room for the addition of milk for a more classic cake taste. Thanks for sharing.

Hi Jenna, you are the best, I have changed my recipes from before for yours, they are excellent, but the greatest success I have had, with chocolate cupcakes, and lemon curds in my cakes. The only thing that has not worked for me are the macaroons, but that's before. I thank you for sharing your recipes. Greetings from New Jersey.

I love this recipe! I've usually included carrot and coconut in the recipe and the cake is topped with an orange marmalade buttercream. I think I'm going try this version, as I think it will be favorited amongst more people.

Thank you so much for the recipe.I have a pecan tree but unfortunately the parrots ate all the nuts on the tree and now I have to wait for the summer that it will grow again. The combination of banana, pineapple and pecan nuts seems to be a winning combination

Re pineapple eating trick, Emmymadeinjapan , (her channel name) did a whole video on that pineapple trick. I recommend watching it she does a great job at proving it, showing the “cooking show magic version”, and theorizes how to make it work better.

I do the same thing with my bananas 🍌, putting them in the freezer when super ripe. Always use mine for banana bread. My boys love my banana bread. 😁 Ive never made a hummingbird cake but this looks quite delicious...can’t wait to try this cake. 😋 Some of my friends tried the pineapple hack but didn’t work like all these videos we see!

LOVED learning about this cake... I might leave out the bananas lol!!! Looks yummy!!! Jemma can you do a vanilla sponge and chocolate sponge that are both gluten free because WE always have that person who is gluten and I hate leaving them out of a party dessert time thanks :) I love these sunday bake alongs :) TFS

Nice! Although fyi in the States "whizzing" means something totally different than using a stick blender. LOL Oh and absolutely with the pineapple! That's how we enjoyed them when I was a kid: you cut the top off and scooped out chunks.

I made this once for my oldest daughter's birthday and really enjoyed it. I like looking for the oldest recipe I can find when trying new things so I know how it started before people start fussing and fixing the recipe. So I found an old magazine recipe, no picture, and for the topping it described (poorly) arranging the pecans in a hummingbird pattern. I had been hoping you'd do that so I could figure out what the heck it meant. I ended up doing pecans along the edge and a large letter in the center (first letter in DD's name).

Oh could you pretty pretty please make a sultana cake 🙏 🙏🙏my nan used to make sultana tea cakes and they were delicious but when I try to make it the sultanas sink to the bottom. I’ve made your carrot cake and it’s the best.... this one is now on my to-do list. Thank you so much for the time and effort you put in for us 😊

Am I the only one one who hates nuts in any type of cake, cupcake and even ice cream? I don't like biting into hard bits when I'm eating moist thing. The cake still looks amazing though!

My grandma made this cake all the time and half the time with out nuts because I hated them. Still do. I'm with you on not enjoying hard bits in cake. Also can't stand seeds in things either.
