Fun fact this cake originated in Jamaica where it was called a doctor bird cake, the doctor bird is the national bird of Jamaica and it’s a hummingbird. L. H Wiggins took it to another level by making it a layer cake using cream cheese. It’s a pleasure to see the South embraced this Jamaican gem.

I love a good piece of humming bird cake. I do little cream cheese rosettes and put a praline pecan on the top of each rose. Easily one of my faves. Possibly tied with red velvet

Ivy.....please please help me!!! One of my favorite childhood memories is the tunnel of fudge cake. The ingredients to make it, no longer exist. I've tried different substitutes. To no avail. Could you please help?
