Eggplants are not all the same. Lidia choose and preps different eggplants, then demonstrates how to cook them. For eggplant parmigiana, a most popular Italian-American meatless dish, fried eggplant is layered with cheese and tomato sauce, then baked bubbling hot. Beautiful recipes. Thank you Lidia. I learned from Jacques Pepin to buy male eggplants if you look at the end of the eggplant it has a round mark, a female has a slit. The mail has very little seeds were the female has a lot of seeds.🇮🇹♥️

I just found ur channel, but I love it so far one thing you said that is so important is moderation. I had gastric bypass surgery to help me limit my moderation way bk on 2003.. I very much appreciate what you said about healthy eating. The last dish was new to me and looks like the most healthy. I’m vegetarian so eggplant is generally what I eat when out. That was a great cooking instructional video. I just ate a dish of eggplant Parmesan my wife made last night and I was just looking for other eggplant recipes because I like it.
