We visited the Sourdough Library in St. Vith, Belgium and baked a baguette using a 240-year-old sourdough starter, the eldest of them all! Karl De Smedt, also known as the Sourdough Librarian, allowed us to use one spoon (or maybe two) of the eldest starter to date in the library. We promise you won’t believe the results and how active the starter got!
This is the recipe we used in the video for 1kg of dough:
- (80%) Strong flour: 406 grs
- (15%) Wholewheat flour: 76 grs
- (5%) Rye flour: 25 grs
- (75%) Water: 381 grs
- (20%) 240-year-old Sourdough Starter: 102 grs
- (2%) Salt: 10 grs
