This is a great experiment. I think it could be helpful in situations when you are really stuck because you don’t have bags. However, l think there are a lot of stuff to consider: 1) If you season before sous vide (which is better than seasoning after S. V., you’ll lose all seasoning... so a lot of dishes can’t be done 2) If you S.V. a big piece of meat you’ll lose the juices coming out of the meat which are great for sauces 3) cleaning everything will be a headache Great video man!!!

I think because it's not sealed people don't post it under sous vide, but may put it under boiled. This to me is actually similar to the idea of hot pot or shabu shabu where they slice it thin so it cooks fast. This reminded me of the experiment with the dry soup powder you added as the seasoning. I think you could do this in a super flavorful broth.

There best thing about the bags is being able to keep your seasoning from washing off. Those were two great looking steaks though! Keep them coming my brother! To everyone saying it's just a boiled steak, you're wrong. Water doesn't boil at 135 degrees.

Hey ninja! Love your vids, the technique to "sous-vide without a bag" is called confit. Instead of water try clarified butter or duckfat. Normal temp for confit is 80C; however, I think you can adjust the temperature any way you want. Hope you try it!

The main reason for the use of vacum bags on a sous vide cook is to compressed the food without almost any air, which with the use of seasoning is perfect to give a big boost on the flavour of the food. This experiment is a big game changer because Ninja claims that that is almost no difference. It would be interesting to make a final test between a stake with proper vacuum sealer, seasoned before sous vide, and a no-bag steak on sou vide seasoned after sous vide. That is the ultimate experiment that i'm really curious about! Anyway, very good video Ninja. Great great idea!! I was wondering if is really necessary to buy a vacuum sealer or not, and now i'm half decided. I would be very grateful to see that ultimate experiment!

If you want to vacuum seal the plastic bag without the machine, put the bag (seal-side up) in the water while it’s open and without allow water in the open seal. The pressure from the water is greater than the pressure from the air, so the water will push the extra air out. When you get all the air out, slowly lower the bottom of seal unto the water surface and then close the bag.

Great experiment! I was totally expecting that come out looking like a bland and poached piece of meat. I was curious of what would happen if steaks were cooked in a temperature controlled oven in a sous vide bag, out of the bag, and wrapped in parchment paper and seeing if sousvide can be attempted in the oven without water as long as the temperature is controlled somehow.

I've never had anything cooked by using that technique I've always seen how it was used on the old Channel used to be on with your friend that always do it! Now Ninja I'm sure that effect is almost like a slow-braised, I wondered if you had the Water season would that make a difference think about that

I think it will make a difference for sure, but I'm afraid the sous vide machine will get very dirty... the water going into the machine, heat up and send out... When I took it apart it was a bit dirty but nothing crazy but is you put salt, pepper and other spices in there it may get in bad shape inside... Don't know.. Something else to try! 😂😂

I've been sous viding for just over a year now. I'm an apartment dweller, and I picked up a circulator, a stainless steel pot, a blowtorch, Coleman green gas canisters and a searzall attachment (to sear my steaks after sous viding them). I also picked up a foodsaver and bags, but you don't need these really .. you can just use BPA-free zip loc bags and use the water displacement method. My complex doesn't allow grills, so I elected to go this route. I use my torch/searzall on top of my stove (exhaust fan on) and just sear my steaks in a broiler pan. I've cooked pork loins using sous vide as well and wow, but I'll admit I normally just buy my chicken previously cooked from my grocery store (way easier). I have a Weber grill though and I do whisk it out during the weekends here and there, but don't tell my complex ;) Sous viding takes some patience and practice, but steaks really do come out amazing and perfectly cooked every time!

@@Joshuaellis420 Yep heard that works too for steaks that is. So if you're not cooking roasts, pork loins, etc., and just steaks, then that's definitely a way to go. Just don't sear on a cast iron pan if you live an apartment. I learned that the hard way.. smoke alarm went berserk :D

I think a big factor was time and the heat after. If you went to a pasteurized route that could mess up the meat.

I sous vide in a straight sided clip top Le Parfait glass canning jar of suitable size. ( You could use any waterproof Mason jar that’s suitable for canning). I personally don’t care if there are pockets of air in the jar but if you’re concerned about it then add some broth to the jar to displace the air. Cooking in glass is healthier than plastic and you get to keep the meat juice to drink or use in sauces.

I think you picked the perfect amount of time to cook it, maybe even two hours. If it was any longer, you and Mrs. Ninja would be testing #B a beautiful steak and #A a shredded beef taco.

At 130, you are basically poaching your steak, at 150 to 180 you are low simmering it, at 180 to 211 you are high simmering and at 212 you are boiling it. Give or take. Poaching is very gentle on delicate meat like salmon or a high quality cut of steak, you wont be 'boiling' out all the flavour, hence why it works. You will be alright without a bag at temps below 180 I guess without taking away noticeable flavour but above that, it gets a bit aggressive. Also, you could do this with a pot of water and controlled fire with a thermometer to keep an eye on temp if you dont have that fancy ass sous vide machine

Easy answer is if its not under vaccuum which is sous vide in French then it's not sous vide. You're cooking meat in water.

I thought that the no bag one was gonna be less flavorful case when u boil meat usually the blood and the myospherine go away and these are the main flavors to have a best steak.... I really didn't expect this 😂🤣❤️
