📋 INGREDIENTS:
Dough:
200 g dark chocolate (7 oz)
200g butter (7oz)
325 g brown sugar (1 1/2 cups)
1 vanilla pod (1 stick)
6 eggs
100 g flour (3/4 cup)
1 tbsp cocoa
1 teaspoon Baking powder
A pinch of salt
Filling:
250 ml pomegranate juice (1 cup)
2 tbsp corn starch
400 g berries (14 oz)
Chocolate icing:
150 g dark chocolate (5 oz)
150 ml 30% cream (2/3 cup)
10 g coconut oil (2 teaspoons)
Baking pan and baking time:
Diameter of the baking pan: 26 cm
Bake at 160°C (320°F) for 40 - 50 minutes, convection

So many good things here... as always! The brownie cake rose and kept its height. The crackle top finish is consider to be the pinnacle of brownie perfection and you nailed it perfectly. ( the crackle top still eludes me to this day ) I hope everyone noticed that you didn't water down the pomegranate juice by adding the corn starch to water. Also, everyone reading this note that you never add your corn starch slurry until the mixture has come to a boil as she does magnificently. The tartness of the fruit filling will balance the sweet chocolate. I love the rustic look of the cake as it will surprise people eating by how refined and flavorful the cake will taste. Thank you for another outstanding baking demonstration that shows everyone the proper way to make this recipe.
