Valentina, you did the right thing when you skimmed off the scum from your soup. Taking away those bits makes the soup pleasant to taste. Corn and cabbage are good in bulalo, but you dont need to shred cabbage into strips like Borscht...medium chunks would be better so they dont get overcooked and become too soft. That chewiness from the Chinese cabbage adds to the Bulalo experience, the size of your cut will change the texture. Also, you don't need to put that much cabbage, its different from Borscht , you add less cabbage . You can also add a little bit of Russia into your soup by adding some chunks of potatoes , biting into tender potatoes is so delicious ..... Also, if you are able to find it in supermarket, adding a teaspoon of fishsauce into your bulalo further enhances the flavor . Dont use oyster sauce ...oyster sauce is delicious in pancit and bbq, but not bulalo. It's much too rich and salty. When making Bulalo, you want lightness and clarity of flavor , because beef is already rich in flavor . Just enough meat and enough veg floating in broth, dont add too much cabbage .... Dont put malungay or lemongrss, those are delicious ingredients , but they will take away from, not enhance, the soup... Bulalo is about BEEF flavor , lemongrass and malungay will overpower with their citrus and herbal flavors and it will not taste the same.

10:55 Actually, here in the province of Laguna, Philippines, we put onion and ginger in our bulalo and simmer it until tender. And then we eat it with fried garlic and some chives. If you put ginger, you can omit the lemon grass because they have similar flavor or vice versa. You can also put both of them. It depends on your liking.

u should boil the beef meat first in 5mins with 2pc star anis,dried bay leaves,pepper,salt,onion to remove the scum or dirt then rinse the beef and remove the spices.Then you can fry garlic,onion, beef splash a bit of fish sauce then add water to soften the meat.While boiling u can add 1stock of celery,dry leaves,whole peppercorn and other spices seasoning u like.When the beef is tender normally takes more than an hour u can remove the celery the reason is to only give flavor to the soup,then add the corn,carrots,cabbage and season salt pepper.This time the cabbage look uncooked,the cabbage need time to be tender .Keep cooking and goodluck .

Valentina, thats the variety of cabbage grown in winter. It is called Napa cabbage. Usually used for kimchi, salad, or for soups. These napa cabbage are milder then the regular green cabbage. Your soup looks good. Enjoy and God bless you and your family 🙏 ❤️

Put the beef meat with pepper,slice ginger in the cooking pot without water then let it simmer on its own water until dries up .When dry ,add enough water to enable the meat to becomes tender.When water boils add your slice corn Add salt to taste then lemon grass and then cabbage slice it not in strips but in chunks.

oyster sauce is good once you saute the spicy and youre beef put oyster nix little put water to bolied. The bat partner of youre bulalo is Kalansi , Patis ang red chili. First Boil bones then drain, then change the water this way the broth will be nice and clear and yes you need to remove any impurities, that’s the brown stuff that floats on top. You can add green onions too just before serving.

To cook better bulalo soup to boiled the bones and meat with ginger and lemon grass first until soft. Then, remove the bone when the meat is cooked and put to another container. Drain the soup into it with a drainer to catch impurity such blood and bones dust. Put the onion chop cabbage. Chop corn, 2 cubes beef broth and fish sauce. You don't need to put the lemon grass and ginger with the new broth. Just simmer it until vegetables are cooked.

Just a suggestion my friend. If you will boil it for 3 hours, next time initially boil the beef for 1.5 hours and then throw the first boiled water. Then boiled it the 2nd with patis to taste or some beef cubes, ginger, garlic and onions for another 1.5 hours. If you want to cook much quicker, prepare a boiled water already if you have kettle, use a pressure cooker. Same process initially boiled the beef for 15 mins then throw the first boiled water. On the 2nd boiling, then add patis to taste, corn, onions, ginger, garlic and boiled for another 15 minutes, then add those preferred veggies. Of course don't forget the pepper. I also use at least 1 pc of green chili and cut it into a few pieces for the biting taste of the soup.

the trick for more umami in bulalo broth is to boil the bones first in long hours at least 12 hrs for very very low fire. much better if more hours. cook the meat in the end. much better to add salt or patis in the end since bones contain sodium already. its fine to use corn and cabbage. but the complete veg is you add potatoes and green beans.
