If I see a good deal on steaks at the supermarket, I can’t help myself from making the purchase. The problem is that I’ve accumulated an absurd amount of meat and all the freezers at my house (and my parents house) are completely full…. After doing some digging in these freezers I came across the two steaks in this video, and it was time to put two year frozen steaks to the test. This was genuinely eye opening!

As someone who hunts and freezes deer, I can tell you that the freezer works magic. I’ve had 5+ year frozen steaks and tenderloin that tastes perfect if frozen properly

My dad when he was in the USSR army in mid 80’S told that they ate frozen meat that was dated from 50’s. No vacuume, no bags, only wrapped in cheese cloth. He said nothing was wrong, it tasted a bit off, but he is alive and well

I really appreciated this video because I have a few meats that have been sitting in the freezer(poorly packed as well) and I'm a bit of a Nance when it comes to old stuff, but this gives me confidence. I mean I've definitely done it before but seeing someone make 2 year old steak and enjoy it is reaffirming. Damn smoke alarm

Great video. Just recently I have grilled a quality Angus porterhouse that had been frozen for couple years tightly sealed in cryovac bag.. The tenderloin part tasted delicious but the strip loin part had sort of an off flavor, perhaps freeze burn flavor. My guess is that water particles crystallized differently in each of the muscles that created that effect.

Love your videos Max. Without ever trying this experiment, I’d hypothesize the thinner the meat, the less likely to have a desirable outcome the longer the steak is frozen. But with thick cuts like yours, even still I’m shocked by those results. Happy 2023 🎉

I've only noticed freezer burn on roasts. Usually it results in a spot with a different texture, but taste wise it has never been off.

When i was in university (2006), I ate meats that were frozen for more than 20 years with proper seal. The meats were stored in bunker freezer since the late 70s / early 80s and people sort of forgot about them. The beef and lamb were very pale and looked more like chicken. The colors were very pale pink (raw chicken meat color) to pretty much white (cooked chicken meat color). Surprisingly, they were still edible. So dont worry eating frozen meat. You will be fine.

I have had venison get freezer burned. In the past we just threw it out, but a couple of years ago a chef/butcher I got to know told me that when that happens, unwrap the meat and then put it in a sink of cold water and let it thaw in there. It works, the meat rehydrated by being in the cold water while it thawed. It tasted delicious, just like fresh frozen meat.

I vacuum seal everything, keeps everything clean and fresh. I have a few steaks that I’ve forgotten about as well as some leftover cookouts that’s been sitting in the freezer, whenever I pull them out and sous vide them, it’s like they were made yesterday. Best investment I’ve made since I buy a lot in bulk.

I just ate a steak from an Antelope backstrap I killed 2 years ago. It was vacuum sealed and very fresh when frozen. I sous vide at 135 for 2.5 hrs then quick seared it in a cast iron and it was absolutely delicious! Nothing wrong with freezing meat for an extended period of time but 2 years is about my limit and if I know I have too much game to eat within 2 years I give it to friends/family.

Drop the temp on it well, pat it dry if necessary, a decent dry age on it then trimmed helps. Vacuum pack it with the good stuff and a tight wrap you can probably keep one in a deep freezer for at least three years.

Nice Video as always. Could you do a video about when to use which kind of pan. I am struggeling choosing what to buy right now. A Cast Iron or a stainless one. Or will the results with a non Stick pan bei decent

Cast iron is great to have, downside it is heavy and a bit of a pain to clean. I personally don’t love stainless. Check out the hexclad pans. I actually really like them!

To clean them get them hot and no soap or very little and scrub while it's hot and it helps if you get it hot and scrub while the water is bubbling it helps get the stuff you don't want on the bottom. Also after washing I use spray olive oil so grease the pan. Don't let cast iron sit un greased and of you know all this ready my bad.

I buy beef from a local farmer, usually 1/4 or 1/2 steer. I found a 3 year old roast in the back of my freezer. It had no freezer burn, and tasted perfectly delicious. I am shocked that the freezer burn didn't compromise the taste or texture, but the time frozen seems completely normal to me.

This gives me confidence to buy more meat at a time , I usualy only buy 1-2 whole loins and it lasts about a month and if they are frozen longer than 2 months I cook them and feed them to the dog. I will be freezing up to a year now with proper vacuum sealing

The fat content of those steaks are definitely what saved them. I had some venison steaks in my freezer for about 2 years not vacuum sealed but packed pretty well still. And It didn't seem like they got freezer burn I had the packages they were in wrapped in several shopping bags. However when I Unwrapped them and took them out it was like I cut them after cooking without resting almost all of the juices cam out of the meat. They were still very edible I just had to cook them in heaps of butter but I do feel that they would have been much better fresh.

In my experience leaner cuts always last way longer in the freezer. Fat is what goes "bad" (rancid tasting) first

Freezing is actually better for most cheaper steaks. I find they’re usually too thin to get a good crust without overcooking but freezing (maybe not completely) helps keep the inside juicy.

butchers tip, after uve frozen ur meat spray it with mist water and freeze again to give it a water shell that helps prevent freezer burn for long term storage beyond 6 months. wrapping in butchers paper after will also significantly help as the water and paper creates a perfect barrier for the 6m-5Y storage mark. vacuum seal is only good for about 6m-2y and really is only useful for items ull be gently packing and not really moving ever. i recommend butchers paper over vacuum seal 9/10 times

freezer burn is also just freeze drying something slowly so u can also use the water spray technique on already burned meat and refreeze it to reconstitute that spot before eventually thawing to eat.

I've cooked steaks that old before. If you trim outside they're usually fine unless the steak was totally exposed to freezer burn.
