Sassafras was banned by the FDA for causing cancer and liver damage which is why root beer isn't made with it, I suppose if you remove the safrole it could be made safe but I wouldn't recommend growing and using it at home.⚠

My wife and I realized what we were spending on nuggets and fries every week (and we really only did it about once a week). I made a giant batch of nuggets and fries (slightly different recipe than yours, we did the boil for 3.5 minutes in water and vinegar then the first fry), and threw them in the freezer. 12 minutes in an airfryer beats 12 minutes in a drive through line and we haven't missed fast food at all.

I appreciate the effort of making things yourself, which is nearly always healthier but also cheaper. However, why not make anything actually incredibly good that is also healthy? Even a fully decked out burger with some good bread and vegetables would be a much healthier and more delicious option over nuggets and fries, especially if you can buy organically.

I'm 53, and as a child, I fell in love with mcdonald's rootbeer soda with my happy meal. I still love rootbeer. Their frenchfries were fried in beef tallow and were heavenly. Another great video, Mike!

Such a cool concept. I did this last year with pizza, the only thing on my margarita pizza I didn't grow was the cheese, but I made it from milk from a local farm. The pizza was tiny because I could barely grow enough wheat for a full pizza, but it counts!

Coke owns Barq's root beer since about 1995. But, since it is a regional brand it is not carried every where for some reason. Before they bought it it would be understandable since they only distributed it before they bought out the brand.

As someone who doesn't order McDonalds at all, or KFC. Because im from EU and i would rather eat kebab or pizza as takeout trash food (if good portions kebab is kinda healthy). I recently tried McDonalds few burgers and i have to say they were mid af, especially for high price. Can literally just throw in few spices into the grounded meat package, mix it and will come out tastier.

It's really not good. I tried it again for the 1st time in about 15 years. It tasted watery and it was dry at the same time. How is that even a thing? I think I had a big mac double, deluxe or something like that. At least burger king's meat patties taste like meat.

There are so many fast foods that you might think are too hard to make at home, but some of them are deceptively easy to make or make better. Cold oil French fries are so easy!!! I cut up Yukon golds, toss them in the Dutch oven, cover in veg oil, and only then turn it on med high. Let it come up to a sizzle and keep stirring until they are g.b.d. Drain, salt, and eat. Fast and easy! The brined method isn't fast, but it's fascinating. I may have to try it.

Great experiment and looks so much healthier and tastier that the original. We don't have a garden set-up yet but might try and recreate this with produce from our local farmer's market. And thanks for the tip about naturally carbonating with Instant Yeast - we are for sure going to try using that!

Barq's Root Beer is bottled by Coke. It used to taste amazing, very similar to sassafras and it had caffeine. Process 'improvements' changed Barq's so that they use the same flavors as all the rest-wintergreen and teaberry, and they took out the caffeine. Now it tastes more like Double Bubble chewing gum than root beer. I will try your recipe if I can find the sassafras.

fries from mcdonalds varies from place to place. some places do a consistently great job at cooking the fries while other turn out soggy all the time... they def are so much better cooked a little longer. this video was great enjoyed it

Bub used to always talk about how soft fast food burgers were, so you could eat them almost too easily, they just smash down, no effort to chew, which probably makes people crave them more, it's not just fast food that is quick and affordable, it's convenient for your mouth to eat! Back in the day, Julia Child loved McD's fries.They were fried in tallow. Then, came the heinous lowfat movement and now they are fried in nasty seed oil. I am blessed enough to live in a ranch community where I can buy tallow. Yum!

Love your videos and have tried some of your recipes. This comment referring to 4 easy breakfasts. I grew up in 50’s and 60’s. Right after post ww2. . Processed foods started coming out and it hit big I guess because before that everything was made from scratch. These processed foods were great for the housewife because they were fast, easy and got them out of the kitchen faster. Can you imagine , in their eyes, how much time was spent in the kitchen making 3 meals a day from scratch? There were no crockpots, microwaves, air fryers etc. and no one ever mentioned what ingredients were in these processed foods at all, or talked about organic. My daughter is 45 and when I raised her I was always trying to make healthy food. But even then in the 80s there wasn’t much mentioned . Things started coming around in the later 90s. So in today’s world I read every label and am very particular what I feed myself and my grandson. Food anymore is a scary thing.

frying fries : 1) fry at 140C until cooked through but not golden 2) let them cool down at room temperature 3) fry again at 180-190C until golden 4) lightly salt while taking the excess oil off in a dish lined with paper towel. For better taste, use beef fat instead of frying oil, but I know it's harder to find in the US 😅 Your first oil bath is too hot 😊

Making American cheese is actually not that hard… just melt mild cheddar cheese and mix it with sodium citrate (found in the kosher section of most grocery store), then let it solidify again! Of course you can then make it with any cheese you want, I’ve made it with gruyère and Stilton mixed together and that was something!

You can make American cheese from scratch. Cheddar cheese and water + sodium citrate as an emulsifier/stabilizer. You can even synthesize your own sodium citrate using baking soda and citric acid.

Other types of Russet potatoes similar to the Burbank for making French fries without some of the Burbank's issues are the Rainer, Norkotah, and Ranger. The Nooksack is, too, in fact, better, but it has such a long dormancy period (good for long-term storage) that it takes forever to sprout in the spring so will be a late season potato.

Loved this! I knew from the start your “slow food” with natural home grown produce would instantly be better than McD’s. The best thing for me is that I am able to make my burger from meats of my choice. Turkey, Black Bean, Salmon ect! As I am a low carb eater due to type 2 diabetes, I can omit the bread or make a low carb bread option. Thanks for the education and insight! Now, I better go find a Sassafras Tree and see if I can make that Rootbeer with a natural no carb sweetener! I bet it can be done! Allulose? Maybe?

You can totally make American Cheese at home! You'd need baking soda, but if you mix lemon juice with baking soda you'll make sodium citrate. Combining that with cheese and some milk is all you need. Your cheese will be lemony, which may not be what you want. But you can always buy sodium citrate online for cheap and use it to make american cheese!

Thanks for this! I never really cared for McDonalds although MacDonalds is so much better in Europe, starting with the places being clean and with all the recycling bins minus all the homeless. Anyway, so much better to eat stuff made from scratch and I am happy I will now be able to reproduce a good burguer (which may be lacking in Europe!) over here in Europe. Making American cheese at home is actually surprisingly simple. You just melt down some cheddar cheese then mix in an emulsifier of your choice and add water. It’s just cheddar cheese with a higher water content which allows it to melt so well. However because the water content is so high the USDA doesn’t allow it to technically be called cheese, which is why you see it called “cheese product”

Very entertaining! I loved your tasting notes / descriptions and how you have props to McDonalds on making a delicious product. The beef in your burger is nowhere near a fair comparison! Sugar is one of the big defining tastes of fast food. They literally add it to create an addictive food. It's not even a secret. These companies are proud of the science that they've done to get a perfect balance of the exact amount of sugar to add to not taste sugary, of salt to not taste salty. All to keep you coming back.
