I had Mediterranean Baked Chicken for New Year 2023 ❤️

[ Mediterranean Baked Chicken ]
--------------------- INGREDIENTS ---------------------
🍗 4 Chicken Thigh
🍗 1 Large Onion
🍗 100g Cherry Tomatoes
🍗 Salt to season
🍗 120ml Water
🍗 Parsley to Garnish
CHICKEN RUB INGREDIENTS
🍗 4 Tbsp of Tomato Paste
🍗 1/4 Cup of EVOO
🍗 1/2 pcs Lemon Juice
🍗 3 Cloves Minced Garlic
🍗 1/2 Tsp Oregano
🍗 1/2 Tsp Smoked Paprika
🍗 1/2 Tsp Cumin Powder
🍗 1/2 Tsp Black Pepper
--------------------- INSTRUCTIONS -------------------
1. Pat dry the chicken thigh
2. Season with Salt
3. Brush EVOO on a baking dish
4. Cut onion, place on the baking dish
5. Squeeze lemon juice
6. Mince garlic
7. mix chicken rub ingredients all together
8. Apply the rub to the chicken
9. Arrange chicken on top of the onions
10. Insert cherry tomatoes on top of chicken
11. Add water and bake at 200°C for 30 ~ 40 minutes
12. Garnish with chopped parsley
