you know what? plz don’t hate me ahahahaha but i came here almost expecting to see some sort of ‘carbonara’….but you NAILED it🎉🎉🎉 THIS IS IT😂 I live in Italy, i know what i am saying….but you wouldn’t believe how many publish awful stuff, even some restaurants are using cream and curry in this, which i really consider a crime especially doing it in Italy :))))))

Hey there, your comment really made me smile 😊 Thank you for your honesty. 💖 If I’m absolutely honest, I was one of those doing the crime. 🙈 I never actually thought about how it is made until I tasted one that was properly made in an Italian restaurant here in Dortmund. Shortly after that, my sister studied a semester abroad in Trento, and I decided to use this opportunity to try to get the original recipe. She had two Italian roommates, and one of them was kind enough to share how her family makes carbonara. I tweak the recipe as little as possible, and man, did it taste good!! 😋 Super creamy without the cream and the salty, crunchy guanciale adds so much flavour. 😋 I'm salivating just thinking about it. 😅 Also, this was when I learned about pecorino. I always used parmigiano, but the flavor is different. It's a shame we can't really get guanciale here, but next time I travel to Italy, I will get us some and freeze it for the carbonara.
