The batter blends much better when you mix the wet ingredients and (if you're me and a little kooky) sift the dry into the wet mixing as you go. You're less likely to get a clump of spices in one bite and such.

It indeed looked a little over baked. You can follow recipes, but you have to learn how your oven affects each recipe. It takes trial and error and no recipe can teach you how your oven works, cuz every oven is different 😁 That's why I hate baking in ovens I don't know hahaha

There are three “types” in the food world: 1) Cooks-these people are perfectly capable of following recipes, but like to get creative. “I wonder what would happen if I put ________ in, instead” is often heard in their kitchen. Produce: soups, stews, casseroles, panini, roasted meats (to name a few) 2) Bakers-these people have the precision necessary for handling recipes that call for exactitude due to the chemical/physical nature of their creations. They have a deep appreciation for the difference between baking powder and baking soda. They always mix dry ingredients, then wet ingredients before combining the two. Produce: tea breads, scones, cookies, cakes 3) Makers of consistently excellent pastry-actually a subset of Bakers, these people are freaks of nature. Don’t even try to understand them. Produce: Eat soap, Karen! Nobody CARES about your tender crust OR light-as-a-cloud puff pastry!!!

The reason to mix the "wet" ingredients separately from the dry to start and why sugar is included in the "wet" ingredients- is to help the sugars to start dissolving in the eggs, butter, and any other liquids before adding to the dry ingredients - It will help everything incorporate better.

Add 8oz of apple sauce to keep the cake moist, it has no taste and it’s heather than mayo. I made the same gingerbread cake for Christmas using apple sauce and it came out great. :) keep it up

Oh my gosh Rachel, I love how you jump in to projects wholeheartedly and troubleshoot along the way. I feel like gingerbread cake and cookies have deceptively easy recipes, but actually are easy to dry out and even burn. The hobbit house actually looks great. I laughed so hard in the outtakes. I always look forward to all your videos. Keep up the great work!

when I first watched LOTR with my husbands I told him the hobbits reminded me of Italians - we are short; always eating; have huge families; love to eat and party (1st breakfast; 2nd breakfast, etc) We're short - some of us do have hairy feet - muhahahahahaha I love this! You're a ball of fun!

This turned out so pretty!! The painting really took it to the next level! My mom and I are amateur novelty cake decorators, and for my last birthday we recreated Bag End out of Rice Krispie treats and fondant. Definitely so much harder than it looks on the baking shows, and it took us an entire LotR marathon to get it done haha

Tip for dry cakes: soak them with simple syrup or pour some type of sauce for it to absorb. You can also add jam between layers (make a border of frosting then fill with jam) to help with the dryness and make it more pleasant to eat!

Rachel that cake is amazing! You did such a good job! whenever your cake is dry you can do a soak on it to moisten it again. A rum soak would have been good on this! You would just put rum and sugar in a pot and cook the alcohol out and then brush it over your cake! Trimming the top layer of cake crust off lets more of the soak in and distributes more evenly!

Also a tip if you're portioning out a viscous ingredient you can spray your measuring cup/spoon with non-stick cooking spray. Less waste and easy clean up.
