I liked what you said at 2:34 about putting your hair up. I'm autistic and partially faceblind. When I was younger, I couldn't recognize people if they changed their hair. So in the past, I actually could've benefitted from that disclaimer :)

For me, it's gotten better as I age, but even now, if you drop me in an area where people have facial features I'm not used to seeing, it all comes back. My area was full of Polish people and Puerto Ricans so I'm good with distinguishing people in those groups, but if you don't fall in either of those categories, I can't recognize you by face. Also I have a hard time if I'm meeting a bunch of people at once.

I had an amazing vegetable wellington at a casino years ago. It had a lot of expected vegetables, eggplant, butternut squash, carrots, onions, mushrooms, etc... Plus strips of fennel! It was incredible. Like... I've been a vegetarian for 15 years now, but with veggies that tasty why would you go with just meat? They're such a delight!

I think they're just afraid of change and of trying new things. Plenty of people are also afraid of bidets for the same reasons, believe it or not. So while a bidet is light years better aand cleaner, I've actually heard people say they are "gross." I'll tell you what's gross...walking around unclean like all non-bidet users do. And they do. You are not as clean as you should be if you do not use a bidet. Facts.

9:04 I mean, look-wise you definitely won this battle :D There is probably some room for texture improvement (I guess this is why people go for a fibrous seitan for this purpose) and you could definitely add some beef-flavoured vegan bouillon but girl, you did absolutely amazing with what you got! And the presentation was absolutely 11/10!

What if you took your "fake-on" (fake bacon, see what I did there?) marinade of choice, and put tofu skin into it? Then you wrapped the eggplant in the tofu skin to simulate the parma ham?

I’ve made a similar version of this, using chopped chestnuts and mushrooms instead of eggplant, and I wrapped it in the traditional way as you suggest. It works great. I think Merle might have been going for the aesthetic of having the “meat” stick out of the end like a pig-in-a-blanket.

Merle, did you check the ingredients of the puff pastry before using it? in the supermarkets in my area, i've looked at multiple brands of puff pastry, they all contain Lard, so there are some things i'm unable to make

vegan puff is more readily available than "traditional" butter based - even Pepperidge Farm's is vegan.
