alright guga. sorry not sorry to say you arent the first. but, from an italian over here, we use some kind of sausage (italian sausage that is similar to a salame tho) and ricotta as stuffed ingredients for neapolitan pizzas here. you are safe this time. you should try that one, you might feel in heaven!

One of my jobs was for a bar and grill that did fresh pizza. It was my job to make the sauce as prep cook. We used a big can of stewed tomatoes, and added 2 table spoons of garlic puree, salt, pepper and Italian seasoning. Then we used an immersion blender to mix it all together. It's still the best sauce in my opinion.

I love your idea! They both looked perfect. I'm Australian & I have also done the stuffed crust with meat & cheese, I used ground beef, cheese & finely diced pickled jalapenos, it's the same mixture I use for stuffed bull horn peppers & sometimes I combine seasoned pork sausage, minced prawn/shrimp cheese & jalapeno to mix it up, always a hit. Love your work, and it's always a joy to see guys enjoying their food.

As someone who used to work at Pizza Hut the stuffed crust is the hand tossed dough, it gets taken out of the box and placed on a pan and sprayed with proofing spray, then it's covered and placed in the walk in over night, it's then stretched over the sides of the pan and has cheese sticks placed on the out side and covered and crimped, pizza hut i know all your secrets.

I've actually done this after a friend challenged me to fuse burgers and pizza. I made beef kafta, seared it, wrapped it in cheese, then used it as the filling for the crust with it. If you ever do a fast food fusion or a "will it stuff pizza crust?" video, try this.

I really like the taste of my pizza dough "as-is" so I don't feel the need to modify it. For the meat I'd just put it as a topping rather than stuffing the crust.

Tried this experiment decades ago while I was working in Little Caesars. It tastes great with the cheese strings&Italian Sausage while the Ground Beef tasted bland. Helps if you add the garlic butter. Bit expensive as an ingredient compared to other stuff crust pizzas so it wasn't even considered to be put as a secret menu item.

Guga, gotta up this and stuff the entire pizza (not just the crust) with steak. Think about it, pizza dough on the bottom, a pounded steak in the middle, then more pizza dough on top + your typical pizza toppings.

For the filling you could try doing Monterey Jack instead of the Mozzarella, it is similar in feel and taste to a low moisture mozzarella but has more pronounced tang flavor.

In Italy you'd mostly only two types of filled crusts though: either with ricotta (very common) or with italian sausage (less common). However, I'd recommend that you try it on some different kind of pizza without tomato; filled crust is a thing in italy but it's more common to have it on non-margherita pizzas.

This is a great idea. But I'm not so sure if large corporate pizza chains should try adopting it. Too expensive and time-consuming for their workers to make. They'd prob switch out the steak with pink slime ground beef and take a bunch of other shortcuts to make the pizza cheaper/streamlined, but also significantly heavier and grosser.

Great video. Maybe an advice: get rid of the semolina that sticks on the bottom of the pizza before you launch it into the oven. You'll have less of a burnt flavor. Cheers

It's because the bread will absorb all the oil and fats of the meaty ingredients in it. So instead of these fats getting lost when grilled or cooked on a open flame, it's sealed in the dough. A sandwich already has them cooked separately then combined after it is cooled, so the meat already lost it's water and fat content from cooking.

I'm wondering how the steak and cheese crust would do with ground I round, the cheese should compensate for any lack of fat in the meat and so long as it is ground up finely the toughness shouldn't be an issue.

Back in the days, like 20 years ago I used to frequent a pizzeria and one day the owner offered to make it special and I said go for it. He baked it using two thin-crust doughs stacked and the regular toppings, so it tasted like a cross between a thin-crust and pan pizza. It was obviously craaazy filling, but delicious. Now, what if you put something between the dough? Maybe Cheese or something a little bit dryer like thin slices of Prosciutto? Maybe it's the next level pizza waiting to happen.
