Great work. I restore bikes for fun and it is quite common for the hanger to be bent, so easy to fix with the right tool. Nice tip about using a different wheel to check the problem with dishing. Unfortunately most LBS here in the UK do not want to get their hands dirty and would rather replace than repair. I bought a bike from a woman who had been told by her bike shop that it was beyond repair. It was a good quality bike and really just needed a good service and the front mech fixing. She was asking $60 for the bike to put towards buying a new one. I gave her the money and told her to wait. The next day I phoned her and asked if she wanted her bike back all fixed for $160. She was delighted. It took me about two hours to fix.

Meantime in real life: -Client: So I have one small problem with my drivetrain. -Mechanic: Well, I see that, and wait, there is another problem. Oh wait. There is ANOTHER problem! Oh no. There is so many problems. You will pay me half of price of a new bike next week when I finish the work. -Client: uhm. Actually I think my drivetrain works just right. No need any maintenance. Bye

If wheels are, off centre I would always check they are in dropouts properly then move on from that

Where did you get those prices from? Your Polish channel says that you collected PLN 410 which is closer to $100 rather than $305, so I'm really confused.

well conti's are generally wider... so 25mm will come out at almost 27 even 28... obviously those are already the max limit there. Stopping that watch all the time is completely wrong here. I mean you are still spending time to analyze / check issues or problems... When I am working on my bikes I take a lot of such time. of course I dont need to pay for my work, but i think you shouldn't stop timer when working on bikes. You count it from A to B. At least for me that makes more sense.
