for that first fight you can sneak around the boss, kill his minions, heal up, then 1v1 the boss

How much time does wizard 101 generally take and what percentage of that is grinding? I used to play it but I just don’t have time to spend 10s of hours grinding between interesting content.

Like in every mmo, there will definitely be a certain level of grinding required. You can avoid farming everything but it will become difficult to progress, especially in high level worlds

worst are schools with very low health like storm, sure you have big damage but you're very fragile. The best schools for this challege are either life or death because they can end up doing decent damage and also are able to heal themselves

Definitely death. I'd argue it's even better than life since you can hit and heal instead of being limited to one or the other. They also do a very good amount of damage that can rival hitting schools
