If i remember from playing the Irish monarchy path myself, the thinking behind it is reviving the old Irish monarchy (though there are options to choose which Kingdom of Ireland will be revived with one option being a descendant of High King Brian Boru and others being descendants of Great Britain's idea of a Kingdom of Ireland or people of importance who conspired to free Ireland from Great British and were also members of the aristocracy or something like that) it's basically choosing which flavour of Irish monarchy you'd want with that path

just a tip, you should look up the pronounciation of things if you're doing intros about countries you're unfamiliar with, so that you don't end up saying sin feen (its kinda like shin fayn) and celtic (the c actually makes a k sound here for some reason). I advise you to look up the words on Wiktionary or just Wikipedia (also Quebec isnt q bek, it's keh bek or kwih bek)
