Preparation and ingredients:

Remove unnecessary foil from the ribs.
Brush the ribs with Dijon mustard.
Let's make a spice mix:
2 teaspoons dried garlic.
2 teaspoons paprika.
2 teaspoons brown sugar.
1 teaspoon chili pepper.
1 teaspoon black pepper.
Mix well.
Sprinkle the ribs with spices on all sides.
Salt the ribs on one side and the other.
Line a baking sheet with foil and parchment.
Place the pork ribs on a baking sheet and wrap well.
It is important that the pork ribs are tightly closed so that there are no holes through which steam can escape.
Place in the oven for 2.5 hours at a temperature of 160°C / 320°F.
Remove the ribs from the oven and open the foil.
Brush the ribs with barbecue sauce.
Place in the oven at 250°C / 482°F for 10 minutes.
Let's prepare a side dish for the ribs:
2 celery sticks.
1 cucumber.
1/2 pepper.
1/2 sweet apple.
Greens (dill, parsley).
2 teaspoons French mustard.
1 tablespoon olive oil.
Mix well.

Prepare the marinade:
100 g applesauce.
100g ketchup.
3 tablespoons brown sugar.
3 tablespoons soy sauce.

1 teaspoon dried garlic.
1/2 teaspoon cinnamon.
Juice of 1/2 lemon.
Mix well.
Coat the pork ribs well with the prepared marinade.
Cover the pork ribs with cling film and place them in a cool place for 30 minutes.
Do not throw away the remaining marinade, it will still be useful to you!
Cover with foil.
Place in the oven at 220°C / 428°F for 60 minutes.
Chop 1 onion.
Dice 1 carrot.
Pour vegetable oil into a pan.
Add onions and carrots to the pan.
Fry over low heat for 5-6 minutes until the vegetables become soft.
Roughly chop 1 eggplant.
Chop 2 peppers.
Add the eggplant and peppers to the pan.
Sauté vegetables over medium heat for 10 minutes, stirring occasionally.
Roughly chop 1 zucchini.
Remove the pork ribs from the oven after 40 minutes.
Remove the foil.
Brush the pork ribs with the remaining sauce, reserving some of the sauce.
Place in the oven for another 10 minutes to allow the sauce to brown slightly.
Add the zucchini to the pan with the remaining vegetables.
Cook over medium heat for 5-8 minutes, stirring occasionally.
After 10 minutes, remove the pork ribs from the oven and brush with the remaining sauce.
Place in the oven for 10-15 minutes to form a light crust.

Add 50 ml soy sauce.
Mix well and cook for 2-3 minutes.

Chop 1 pepper.
Cut 2 small zucchini into slices.
Prepare the sauce for vegetables:
6 tablespoons soy sauce.
3 tablespoons rice vinegar.
2 tablespoons brown sugar.
2 large garlic cloves (or 4 small ones).
Mix well.
1 tablespoon starch.
70 ml water.
Mix well.
Sauté the onion until soft.
Add peppers.
