there were measurements for a good amount of the ingredients though the stock took a few (at least three) table spoons of chicken fat, 4lbs chicken wings (cooked in the pot until browned), 1 cup cooking wine, enough cold water to cover the wings, onion*, 1 large carrot, 1 large leek, 2 celery stalks, garlic*, dried shitake mushrooms*, bouquet garni**, black peppercorns*, turmeric*, ginger*, 1/4 cup soy sauce, and three tablespoons white miso. *can be assumed that it's to taste **this varies depending on preference of herb choice

I mean, the instant is about being able to store it away for extended periods of time and return it to being an actual meal merely by adding boiling water. Instant stuff always takes long to make, it just doesn't take long to use.

Don’t know why you would ask this question (since google exist)? But, when you bake baking soda, you’re increasing alkalinity, which is the key to help the ramen noodle give its distinct color and spring like structure.

This is amazing. When I eventually start cooking stuff from scratch I will totally do the dehydrated broth thing cause that would be amazingly useful for me. I use soups a lot for things, like just soaking potstickers from the store in broth alongside some chopped green onion and minced garlic, or using broth alongside the dehydrated stuff and then cooking it down until the broth is a thick sauce that i then place some good fish or pork over.

We make and can broth fairly regularly at my home, so much cheaper. We use frozen, usually the ends of carrots, onions and celery parts of vegetables from when we cook other dishes to make our broth. We have a pressure canner to both make and can the broth, it usually makes about 12 quarts of broth that we store in the pantry.

I usually mix the seasoning in a bowl with a ladel and a half of boiling water, and then cook the noodles in the water until nearly done and just add it to the bowl. That way, the seasoning is more concentrated.

That's why though i love your videos David,is that even if you don't have a lot of what Claire does.You still come out on top with what you make. Claire just came out today you may have already seen it but it's 'remakes' when she remakes what she already did but with stuff from her house because her stuff is at work but she shows alternatives when she remakes them.Maybe you can submit sometime what you've done when you've done her recipes and maybe she'll show them on Bon Appetit one day.I'm sure she'd be so proud and happy she has such a fan and hardworking person watching and trying her work out.You should give it a shot and try reaching out. : ) Thanks for another video.

Bit of advice if you use leeks again, split them vertically to wash the dirt out between the leaves. Leeks form some stores have more dirt and sand than others. Otherwise everything is looking good.

The turmeric is what made it so yellow. You could have blended up the leeks, fine, and added a dash of turmeric powder again for the color. Great job!

You can actually do that hanger trick with a knife heat it up on a gas flame heat it and it cuts perfect I tried just get it really hot.

Baked baking soda tl;dr: high enough heat turns sodium bicarbonate into sodium carbonate, which is a stronger base and alkaline enough for alkaline noodles. Also can be used for the lamian/hand pulled noodles from Chinese Cooking Demystified that I demand David tries.
