I worked at OG for over 5 years. They use a fake “butter” sauce that gets slathered on the breadsticks, not real, melted butter. It’s SUPER yellow. The breadsticks also come in frozen from the warehouse, in big boxes. They aren’t actually made at the restaurant, they’re just baked and then slathered in the butter sauce stuff. Just fyi!!!!! Love your videos!!

As a professional baker I can tell you this: Your dough starts shrinking after giving the form cause it needs time to relax... how you can do it: Make short sticks, let them chill 1 min. and then roll again till you get the lengh that you need :)

i have a genuine question for you about baking just bread what it the perfect temperature and recipe for homemade bread that’s simple for a beginner i’m allergic to sesame so finding bread i can eat from a store is not worth the hassle lol. @Schmitz Katze

@@avocado_trashhhh Unfortunately, there is no general temperature for bread, for example, a white bread needs a different temperature and baking time than a wholemeal bread. I can give you a recipe for a dark bread that I like to bake at the weekend, but it's really not a soft, but a strong, dark bread: 500 gr rye flour 250gr wheat flour 75gr dry / pre-made sourdough approx. 550 ml water 1 tbsp sugar beet syrup ( a dark but sweet syrup here in germany) 1,5 sachet dry yeast (here in germany it´s printed on the packages how much yeast on how much flour, maybe its a orientation for you since I´m not sure how big your packages of yeast are ^^) 2 tsp salt 1 tsp bread spice (it´s a mix of various spices, it smells and taste´s SO good but it will work without it too ^^) Mix all ingredients together and knead with a food processor (or strong arms ^.-) for at least 10 minutes. (yes it is stickier than a white dough, this is intentional) Then cover and let rise in a bowl in a warm place for a minimum of 30 minutes. After the 30 minutes, shape the dough and place it on a tray or in a baking pan and let it stand for another 30 minutes. Once the dough has risen nicely everything carefully into the preheated oven and bake for about 1 hour at 170 degrees Celsius. Since I live in Germany I can not give you American weight units, I hope you can convert it? Alternatively, I still have a recipe for a sweet white bread for you, if you like that and if it´s helpful? I guess it contains more basic ingredience... Aaaaand I´m sorry for my english, it´s not my native language.

As a former "chef" at OG, i can 100 percent confidently say..... i have no clue if these are right or not! Big chain corporations are all about "consistency" so almost everything comes premade and we just heat it up various different ways.

Your emotional response to each dish made me smile, even shed a tear. The pizza was the crowning jewel! As perfect as you dress, you worry about decorating the pizza….and yet that pizza looked well decorated. This was enjoyable, and makes me want to try each recipe! Thank you so very much!❤❤

Tip: put the dough in the oven with just the oven light turned on. Cover the bowl with a tea towel. Make sure u don't turn the oven on. The light will heat ur oven to the perfect temp for dough to rise. (I make sourdough and other breads and this trick has always worked for me perfectly)

@@mirandahutcherson3521 weird, don't all ovens have a light bulb? Guess not. If u don't have one then wrap the bowl in 1 or 2 thick blankets. My grandma used to do that and it also works.

@@leadharsh0616 u could, but depending on the time of year and where u live, direct sunlight (even covered) could make the dough get wayyyyy to hot and hurt/kill the rise. So on a warm day u could put it in the shade but I would not recommend direct sunlight. Think how u feel when sun bathing or in a hot car on a really sunny day, u don't want that. Maybe if it was the middle of winter, then u could put in direct sunlight (covered) but other than that, I would just use the blankets. The ideal temp to raise the bread is anywhere between 80-90°f (maybe up to 100°f but I like to stay between 80-90). U don't want hot, u want warm for a perfect rise.

As a garlic lover it hurts my soul that there are people who can't enjoy it. I heard a rumor that for some food allergies people will already dislike the food before developing an actual allergy to it kind of like a 2nd layer of defense so I'm very curious if you've always been allergic or if you liked garlic if you at one point could actually eat it. @@SjarMenace properly allergic, but it is a light allergy, if there is just a faint hint of garlic powder and its been cooked, I would survive but my through and nose will feel itchy and I'll have some rash around the face afterward. If there is a propee garlic clove used, I would struggle to breath, turn red, get more rashes and it might end badly...

Was having a very anxiety filled evening. I laid down to try and find something to help me cope on KZbin. And I see Raph and it was like that funny heavenly noise that I had my answer. Tada! I love you Raph! Thank you for taking some of my anxiety away. Just a note....that mixer you used, although I didn't see the name brand on it can imagine that it is the best home cook blender on the market. You had about half of your American audience sigh with envy as they are not cheap. 😁 Also, sit the large portion of the dough on the side and then put small clumps on the scale to get the wt.

Hope you find this helpful; When mixing bread dough with this machine, start with the paddle attachment and switch to the dough hook only after the dough "comes together". OR... just mix and knead by hand. It's a nice forearm workout with zero gym fees.

everybody knows that they don't physically mix ingredients and bake the breadsticks at OG restaurants. however, I am a food scientist (an actual one, not one who just claims they are by baking all day long), and somewhere, there is a food processing facility with actual people who make the dough for the bread. they obviously have help from industrial machines and preservatives, but you can't have "real" tasting and looking bread products without real ingredients. I have worked in food production for baked goods before, and there are acceptable standards for how bread products should look and feel, how viscous the batter should be, and how much the dough needs to weigh before baked (and how much the final product should weigh).they may par bake them at the factories but there are still standards in place. it's all part of quality assurance in the factory where they are produced. then they are packaged, frozen, and shipped to OG retail locations where the food service workers finish the baking process.

Blanch the spinach for a few (2 min) and dry thoroughly. It will reduce size but stay green

Raphael Garden 👍😉 amazing, in Italy we use pesto as a sauce for pasta and than clean the remains on the plate with a piece of bread (although Galateo said that's rude) 16 garlic cloves, but garlic it's heavy and I prefer saute the eggplant slices before put them on pizza! ❤️
