HI BBY! In today's what I eat in a week I tracked my calories for a week, to see how many calories I eat in a week as an intuitive eater... and it was a JOURNEY lol!! As always, I included lots of easy and healthy recipes, including vegan cinnamon roll baked oatmeal, healthy blueberry muffins, and lots of quick and realistic meals I love to eat as a busy college student :)

Blueberry NiceCream:
-1.5 frozen bananas
-1 cup frozen blueberries
-1 tbsp almond butter
-1/8 cup almond milk
Brownie Granola:
-3 cups rolled oats
-1/3 cup cocoa powder
-1/2 cup maple syrup
-1/4 cup coconut oil
-1/2 cup almond butter
-1/2 cup chopped walnuts
Mix all ingredients, press firmly into a pan and bake at 350 for 20-25 min. Let cool for 10 min then break into clusters!
Cookie Dough Nice Cream:
-2 frozen bananas
-1 tbsp peanut butter
-1 tbsp cacao nibs
-1/8 cup almond milk
Peanut Sauce:
-1 tbsp peanut butter
-1 tbsp water
-sweet chili sauce to taste
-squeeze of lemon juice
-coconut aminos to taste
-garlic powder to taste
-salt & pepper

Vegan Pesto Recipe:
-2 cups fresh basil
-1/3 cup olive oil
-a few tbsp water to blend
-2 cloves of garlic
-1/4 cup pine nuts
-salt & pepper
