Spices would have probably been too expensive at that time. Nutmeg and cinnamon for sure.

Don't forget that recipes at the time were for the rich peoples ^^ So, it was more of the contrary, spices have began to be affordable (not because the travel was shorter, but because importing them around Africa (wich means around the Ottomans and Venise monopoly) made the price a lot cheaper. And if spices are affordable, that means poor peoples can afford it (well more like middle class XD), and so rich peoples do not want it anymore ^^

@H S Hahaha XD In Middle-Ages food was full of spices, they were everywhere, in much more quantities than today, and with much more adventurous mixes than today. Like sugar was a spice very common in savory dishes ^^ And it continued during the Renaissance ^^

@H S As I said, it will depend of your social class, riches will eat very spicy, more poor people will eat with just salt ^^ I recommend you tasting history, a channel with only historical recipes, and when you get in medieval and Renaissance eras, you see a lot of spices ^^

You must be new to the series, haha lol. She uses recipes from hundreds of years ago, to make her dishes. She's made pretzels, Miso soup, hamburgers...that recipe was a trip. If I remember correctly, the hamburgers didn't even look like hamburgers, they looked like sausages. It was crazy.

An ice cream scoop works really well to scoop out the innards of Pumpkin or other gourds. I will definitely try this pie in much smaller amount if I can cage a pumpkin from one of my neighbors who haven’t donated theirs to the Zoo, or a farm for their animals. Great fun watching the tigers play soccer with a pumpkin, or the elephants play stomp!

Tomorrow is Thanksgiving, I think the grocery stores close in less than 30 minutes, and I have a wicked desire to go buy a pumpkin and a baker's dozen plus a regular dozen of apples and their weight in butter! Seriously this looks like it would be really good w/ traditional pie spices; apple pie and pumpkin pie spices are both cinnamon based so I could totally see this working really well together! Can't wait to try it!

Spices were expensive then - a sign of wealth. It was expensive enough to try and explore the world for a shorter route. That's why they weren't in the recpie.

I totally love the idea of this pie! Thank you for doing all that research and taking the effort to make this jumbo version. I would like to do a smaller version, and then like you say add some traditional pumpkin pie spices. It seems like a really great way to combine two holiday pie favorites, and the puff pastry is really going to take it to the next level. Brava!!

My first thought when I was the Dutch oven for the vassal for this pie was the nursery rhyme four and twenty black birds; baked in a pie...weird. Seems like an interesting old new twist on the typical pumpkin pie must people grow up with. I'm surprised there wasn't any cinnamon, nutmeg and cloves called for in this recipe as well. If I ever get around to making this I would add the usual spices and use a equal parts raw sugar to maple sugar. Love this program!
