Hi there! I use the DoJoe method frequently for briskets. I suggest next time incorporating two levels of heat deflectors. Smoking Dad BBQ has many videos on the double indirect method. Essentially you can layer your heat deflectors on the bottom portion of the DoJoe and a pizza stone on top. Or maybe a combination of your heat deflectors/pizza stone and the sloroller (might have to experiment to make it fit on the Konnected Joe.

Hey there barbecue buddy, I bought a big Joe three not too long ago four or five months or so. Begin easy cooking steaks stepped up to St. Louis style ribs and baby back ribs. Then I tried the pulled pork you know, shoulder pork, and then have barbecued brisket a couple times already on it. The method that I use on my big three is the double indirect method which I picked up from the same guy you’re talking about in this video. If you have the time, could you show the folks the doubling direct method cooking the brisket because everything comes out perfect. The tender bent over your fingers, smoking and juiciness. You’re probably wondering what I do with all that brisket when I cook it I share with my neighbors. Lol.

If you were going to do it again just using a split instead of charcoal, you could get that going in a burn barrel or something like it and then add the split once it got going.

I am not sure what that set up cost, and I hate to be critical, and I realize your are experimenting with a new set up, but it seems to be a lot of work and over complicating smoking a brisket. With all the electronics and gadgets, it seems it should be easier to get the desired results. Sorry

Well... Dutch are on average the largest people on this planet... The average Dutch male length is 1 meter 84 cm, that's a bit over 6 feet and coincidentally, my own length as well. But there are many that are (a lot) larger.

You have never eaten good brisket, or you dont have any taste buds. Brisket is the best tasting beef that you will ever find if done right.
