The croquettes needed more time to rise and soak as dough. Moisture evaporates in the oven, making them rise. For the cheese part you might want to add breadcrumbs or potato flour into the mix to absorb some of the extra fat.

Those sausages look scrumptious! And it's the return of the spiral potato masher! I ought to get my hands on one of those; it seems super effective at mashing all parts of the potatoes at once.

Hey Dave! A tip that I learnt while working in a commercial kitchen. When crumbing, try using each hand for a specific ingredient. Designate one hand for wet ingredients and the other for dry. Don't mix your dry ingredient hand with your wet ingredients. That's how you end up with mess!

I'm from the Balkans. In the Balkans, a dish called "ćevapi" is very popular. according to the recipe, beef and pork can be used. You put a little salt and pepper and oil them and you put them on the grill until they are brown.
