Chia seeds are high in histamines and even though they aren't technically in the nut family, those with peanut/tree nut allergies react to it as if it were one. Found that out the hard way myself.

Out of trial and error, my bf and I found that rubbing the chick peas through your hands in a bowl of water does it super quickly instead of hulling them one by one. Afterwards, the hulls float so you can skim them off the water before straining the hulled peas. Hope that helps 😁

My aunt makes a chocolate zucchini cake that my nephew just LOVES, he ate, over the course of a 5 day camping trip, almost the entire 9x13 pan just by himself and then asked her for the recipe so he could make it himself. I feel like your muffins have a similar vibe but without the frosting. I never tried the cake because she put walnuts on top, but it smelled amazing. 😊

When I make chocolate “ganache” out of black beans I make them in advance and blend them hot! That gives a smoother consistency. It’s really yummy 😋

2 cups of beans (i tried with lentils and garbanzo but use black or red beans for this) 1 cup of sugar (you can use less and even use bananas but I don’t know how it would work) 1 cup of water (you can use 1/2 of coffe and 1/2 of water to deep in the flavor). 1/2 cup of cocoa powder (dutch processed It’s best but if you have one like nesquick use less sugar) 1/2 cup of neutral oil (coconut or you can try others and still be fine!) And a pinch of salt. I do it in the blender, but first I cook the beans myself so I can put them really hot in the blender un tío theyre like a paste. Then while the blender is still on in a los setting, pour the oil gently. Once that os incorporated I alternate a little cocoa powder and a little water/coffe. But you can totally dump everything right away and still get something very yummy. I would recommend to let it chill in a container in the fridge for a couple hours or overnight before using. Ps: Please don’t and all the liquid at once and if youre going to do it, and 3/4 and then add the rest slowly. I don’t know why but a lot of times I Rea ch the consistency of thick and creamy with less water than the recipe calls for. (You can add the salt in any part of the process) The autor for this magic is @Natikiako and everything is in spanish, i tried to explain how I do it. Hope you enjoy!

When my kids were teens who would not eat any veggies I hid cauliflower in mashed potatoes, sweet peas / spinach chocolate cake, ( I ran them through the blender first)& broccoli in spaghetti sauce

Recommendation: consider sugar a wet ingredient and incorporate it into the wet stuff instead of your flour mixture when baking.

On the subject of baking hummus- if you put hummus on a pita and cook it like you would a quesadilla it’s cheesy and wonderful. Would add onion for texture

I have that one too, though never actually made a recipe from it! It's really cute the way it's set up though, with the illustrations of Jerry and his kids. I'm a total Seinfeld fan from back in the day, so it's a keeper. She wrote a second one too, Double Delicious which I think was sort of the same hidden-veggies idea.

In any sort of cake or batter bread, you can add about 2 cups of freshly grated summer squash or zucchini with great results. Add a teaspoon of citrus zest to thoroughly mask any 'healthy' flavors, and all you taste is moisture, delicate cake!

Ya know Rach, if you spray the pan first, then put the parchment paper down, it sticks to the pan and doesn’t move when you are putting the batter in. Just a tip.

One of my favorite swaps is taking brownie mix and a 15oz can of pumpkin puree and mixing it together and baking like a normal brownie. They're better after they've cooled and sat in the fridge overnight, they get really rich and fudgy. The texture is weird fresh out of the oven though!

I've been making "dessert hummus" for about ten years now. Instead of honey/sugar, I use 2-3 dates which adds a caramel-like flavour to it. I also add chocolate chips, as that helps with the texture!

Heat the chickpeas in water to loosen the hull, drain, then rub gently between 2 clean kitchen towels. Most of the "skins" will come off at once!

Have you tried beetroot in chocolate cake? It has become my go to recipe for choc cake since I discovered it. Honestly it's amazing, you add everything into a blender and blitz, then mix in the dry ingredients. SO good!

In regards to the brownies - I take a package mix and throw in a can (juice and all) of black beans and blitz it. Then I bake it. Noone knows.

I put chopped (into tiny squares) carrots & zucchini into my spaghetti sauce & for the meat portion I use half beef & half chopped mushrooms & cook that together. My family LOVES it! I'm going to try the carrots in the Alfredo sauce!

My grandmother was a school cook. She used to tell me all kinds of veggies they put in food. Chopped beets in brownies, that the kids all thought were chocolate chips, was my favorite. The motto was what they didn’t know, was good for them.😂🤫

When you remove the husks of the chick peas it’s called “Hulling”! I do it weekly for hummus and when I make vegan chocolate chip cookies. I actually thoroughly enjoy it as it’s an awesome outlet for my OCD 😅

For those looking to make the chickpea cookie dough... There is just plain chickpea flour that you can buy... Just needs to be rehydrated with milk if choice. Much easier and smoother texture... And can probably skip the nut butter then.

1 cup of Milk, handful of spinach, 1 tbsp of cocoa, 1 tsp vanilla, 1/2 a medium avocado and some monk fruit as a sweetener and you have the best and creamiest chocolate milkshake

I have the same issue with mashed banana. But I've found that blending it makes a huge difference, both to the recipe and to my enjoyment of cooking lol

Hey Rachel, I work at booster juice here in Alberta and we use the vitamixe blenders as well.. we set them on 23 seconds I believe for every smoothie and we have various ones with kale, spinach, etc in it you barely taste it, it’s more of a way to get your greens in !!

Oh you need to try the icecream! Chickpea fluid fluffed up, add cocoapowder and coconutoil aswell as sugar, Mix and freeze. Its so good!

Sweet potatoes - it's next level in muffins! Sweet and creamy....mmmmm.... I use chickpeas for heaps - including chickpea flour for flatbreads, and the aquafaba (bean juice!) is a very good binder for anything. Love it!

I use the chickpea cookie dough recipe from chocolate covered Katie. It's so good! Had a little oat flour and gets pretty darn close to cookie dough!

I make spinach cake almost every Easter, it's delicious, it looks spectacular, very green cake with red bits of jello on cream and brown crumbs which looks like moss. My family didn't believe me when i told them that there is a lot of spinach but you cannot taste it at all :)

For adding beans to any baked good I blitz them with a liquid and a lil coconut oil, then use a sieve to get out the extra fiber-y bits.

We make homemade marinara sauce from our garden, but we puree carrots and red peppers and add them into it. Lot's of vitamins, but it doesn't change the taste!

I have tried a black bean brownie batter dip before and the chickpea chocolate chip dough dip. I preferred the brownie batter and ate it with a biscuit. I also had my sister try it and she was immediately in love with it lol

I make a black bean chocolate cake that’s really good. The truck is to add the beans with any liquid first and blend them well. That will make them disappear.

I made a chickpea cookie dough recipe and it used oat flour, and had maple syrup as the sweetener. It was super delicious and was the same consistency as cookie dough! Would definitely recommend

You should try zucchini bread. I grew up with it every holiday and was surprised, when I got older, that no one else had ever heard of it. IT'S SO GOOD!

Butterscotch Zucchini Cookies! My mom made them all the time when I was a kid! I don't know the exact recipe, but I think I remember her saying that she just used a regular chocolate chip cookie recipe and used butterscotch chips rather than chocolate. And then however much zucchini you want.

Zuchini in dessert is pretty popular like a chocolate muffin with zuchini in it is really good and helps to had moisture too!!

Butternut squash Mac n cheese, chick peas in place of any kind of nuts in chocolate chip or white chocolate cookies, and chocolate cake made with blended canned spinach. I have made all those recipes for over 24 years.

For the muffins i would blend the spinach with the milk etc to save yourself from having to chop it and make it smooth

Shelling the chickpea husks is really easy if you wash them in water and just kind of squeeze them a little.

Zucchini bread and Chocolate Zucchini cake are delicious. Carrot cake. Hummingbird muffins/cake. Lots of ways to hide fruit and veggies in desserts 😋

I make a modified version of that chocolate spinach muffin one that puts the spinach, banana, and the wet ingredients in the blender. I definitely suggest going that route

I use oats instead of breadcrumbs in meatballs, make green rice with pureed/liquefied spinach, definitelly use ripe bananas instead of sugar at times.

Best chocolate pudding/mousse is made with avocados, maple syrup, Dutch cocoa powder, a little coconut milk, a dash of sea salt and a splash of vanilla. Blend together and voila! Delicious, silky smooth and creamy, chill and serve with berries. Tastes like the most decadent chocolate mousse you’ve ever had, no taste of avocado whatsoever! 🤤

Lol! Beans and chickpeas come with 'skins'; shelling is when you take the peas out of a pod. 😀

My dad has Celiac and has been baking with chickpeas for years. The best one I remember him doing was when I was a kid, he made a phenomenal flouerless chocolate cake that he served us for dinner. (My dad is awesome btw 😀). Anyway maybe you could try that too Rach! Great video as always! 😘

Grated zucchini in brownies! You can tell it's in there because it's not as smooth but cannot taste it. Super yummy!

Look at you Crack eggs directly into the blender. I remember when you had to use a separate bowl to avoid shells.

I have a gluten free vegan zucchini brownie recipe that I make for my friends with dietary requirements. I do use hazelnut meal, but it can easily be substituted for another flour substitute (or regular flour if you're not coeliac).

It’d be interesting to see what you think of meringues made with chickpea water instead of egg whites. I’ve seen recipes but haven’t tried them myself yet. It can also be used for mousse

I've heard if you use the frozen riced cauliflower it blends up faster/less likely to have chunks. Might be worth trying.
