U should do a second carol group that goes in regular, still water. That way we can see if it's the liquid or the bubbles or the enzyme making the mushrooms softer! Loved this experiment!!!

Papain and bromelain are enzymes that works on proteins. But the structure of a mushroom is made out of polysaccharides - fungi have cell walls. Pineapple isn't going to affect it as much as it does steak (which it ruins)

Could be water but sparkling water is still acidic (carbonic acid) so maybe it had some reaction to the acid. Wonder if it would tenderize with lemon juice in that case

I recently used the core and skin of pineapple to make pineapple vinegar. It worked great and it smells very much like pineapple. Just make a standard sugar water liked you'd do for Kambucha, boil it with the chopped up pineapple, add yeast or scoby and do the two stage fermentation. First stage for alcohol production, second stage for acetic acid.

soaking in the sparkling water must have made the mushroom more hydrated so that when you cook it, it still stays moist instead of drying. Similar to the experiment Guga did with the ice cubes on the hamburger. The added water keeps the thing moist and softer after cooking. Not sure the sparkling part matters but could be breaking down stuff some.

Try Jamaican pineapple drink. I make it everytime I cut up a pineapple. Boil the skins and core on large pot of water with fresh ginger and turmeric. Cool, ad sweetener. Drink over ice. Its delicious and will help the system move.

I wonder if the sparkling water is just hydrating the inner structure of the mushroom. I always saute mushrooms in water before frying in oil and that step of hydrating really does improve the texture, as well as spread some of that umami flavor in the broth that gets created (eg. when I add in more veggies in a stir fry). But I will have to try this trick with sparkling water!
