Very delicious snack!! I made them with the rub and sauce you did on the sweet and sticky ribs video. And 140C for 1h15. Especially the ketjap sauce fits perfectly for dipping the fingers in.

Awesome job, After the deer hunt when we have butchered them I take all the ribs and boil them for 1 to 2 hours and remove the bones to get the rib fingers off and then I chop them up into small chunks. Then strain the broth and return the meat to the broth and make chili. You should try it I can't keep it very long as the guys just eat it up.

Try the Beef Rib Fingers also! I smoke them for about 2 hrs, then 1.5 hrs in a braising liquid until tender. Great beefy flavor.

Just got the fingers.. first stage 120 degrees indirect for 30 mins. What was the second stage ? 170 degr. Celsius.. 30 minutes or 1 hour

I usually do ribfingers 1,5 hours at 150C and they are always nice and juicy. Today I did exactly what you said, 30 min at 120C and 60 min at 170C, including spraying with apple cider vinegar and I am very disappointed. Outside is burnt and inside is dry. I think I will stick to 1,5 hours at 150C.
