Actually for french omelettes the pan size and shape are important. After trying to peel an apple with a meat cleaver or a butter knife, you realise that the knife might be the problem. Japanese chefs can have a dozen knifes for different uses and have a special rectangular omelette for uses in sushi.

aassbbcc actually if you want perfection, yes you'd want the ideal pan to do that job for you. Like commatoes said, every chef have different knives to do different kinds of cuts and slicing. Same goes for pots and pans, like you're not gonna use teflon pot for caramel making and you're not gonna use a regular pan to cook pancake.

Andrew is probably the most universally liked member of the team, seems to know what he's doing, has an extremely entertaining attitude, and has a sense of comedic timing miles ahead of most of the other employees. instead of milk, i think chef motokichi uses dashi stock and three eggs. chef jacques pepin has a video on making a french style omelette and i think it's a similar method that chef motokichi employs with his omurice. his pan also seems much smaller, which i think helps in stopping a larger surface area from curdling and thus forms smaller and creamier curds. hope you get to see this, andrew! good luck!

Prolly. But I think you can use milk or any liquid to dilute the egg. I watched his video few times and finally know what' he did. Chef Motokichi folded the egg till the middle and flipped the pan toward himself rather than fold the egg till the edge of the pan, like Andrew did. Then he flipped again few times to "sealed" the eggs and that's it. Quite simple but need alot of practice.

one thing i find hilarious about the office is that whenever tasty is working, all the somewhat-fails end up getting distributed to coworkers. for the method he is trying to recreate, the heat should be super hot. you want the outside cooked and the inside underdone. the problem was that he was leaving the pan on the fire too long. you want to remove the pan completely from the heat source
