Not saying that it couldn't be self-promotion, but its unlikely due to the fact that they already have a 1-2 month waiting period for reservations iirc. Plus he already has instructional videos on his youtube channel (motokchi), where hes been posting cooking videos for 10+ years. He's done "private lessons" with random people before too. You can say we're nerding out about food or cooking too much if you really want, but a pro move like that is pretty much the opposite of the definition of "scrub" to me, which generally means "unskilled" or "low class."

Chef seems like such a great teacher! He's paralleling it next to Andrew while Andrew does it for real, and it's such a smart and insightful (and helpful) way of teaching someone how to do something without doing it for them! He doesn't take control until Andrew asks for assistance, but instead parallels the movements besides Andrew as a guided visual. Ugh, I'm in love with this person!

I have to say that I was expecting the experience to be relatively normal when I went to Kichi kichi. However, Chef Motokichi is just like he is in the videos. He's high energy fun and positive. He literally gives everyone in the shop a personal show. Literally. When you visit his restaurant, you'll understand. :D It was great food and fun. I can't wait to go back.

With practice comes technique. I'm not saying I could make this, but any experienced pro cook can make this. Just not with as much flair. The fried rice is just fried rice, just moist enough to hold together. The omelette is the classic french omelette, just with too much egg for the pan and seriously undercooked. The only reason a Chinatown chef wouldn't make this right the first time is just that they don't make omelettes that way. So the secret is tons of practice, which is why he can do the ending. Remember, 10K hours to become an expert at something.

That's life summed up. You statement about 'any experienced pro cook' is false. ANYONE can make this; the only secret ingredient in being good at doing anything is PRACTICE. Do it so many times you feel like shit but continue doing it over and over; that's how you go from not being able to do something to being mediocre to then becoming a god at that certain thing. As you said 10,000 hours practice makes you professional, even more and you'll be a god at that.

Went to eat at Kichi Kichi a few months ago, and Chef Motokichi was so sweet and welcoming! He had a great sense of humor and not only did I really enjoy the show he put on making the omurice, but the omurice itself was amazing. His restaurant deserves all the love and attention it gets!

Aldo Wijaya It's not crowded because their restaurant is very small (about 8-9 seats in total), so you have little chance of getting a seat unless you book 6 weeks in advance! Their restaurant has a booking system that I highly recommend you to use if you really do want to secure a seat. They do a lunch service and a dinner service and I personally think the dinner service is better. Hope you get to eat there!

No problem! I think the website reservation is the easiest and most convenient way for foreigners to reserve seats since it has English on the website. You could probably also call them, but I wouldn't recommend that since they didn't really speak much English, so you would need to know how to converse in Japanese before calling. That, and it'll probably cost you some money for the overseas call LOL.

I went to his restaurant a few months ago during December and damn the atmosphere was incredible, his omurice was so delicious both with the beef or non-beef sauce. Although some may argue that the price is expensive but it is definitely worth it to try it out!:) He is an incredible man, very funny and you can really feed off his energy. Highly recommend visiting his restaurant!

I've been a barista for thirteen years, and this is remarkably similar to how I see training people now. It actually feels like a language barrier, and I find myself relying on talking with my hands. "See what I'm doing and when I'm doing it? Just do that. And then do that over and over." And that honestly gets better results than me explaining everything with words.
