I don’t know if it is relevant tbh, but the katsu and wagyu beef sandwiches I had in Japan were often using a miso glaze type of sauce not regular tonkatsu sauce. And they were amazing 😭 if you don’t specifically have to have beef, check out Komeda’s Coffee chain, their katsu sandwiches are the bomb
