"Fancy Ramen" - yup that's what we call it too - is a staple in my house. I use regular mayo, but will for sure be picking up some Kewpie mayo for next time! Some additions I love: 1) Sriracha in the broth (whisk it with the rest prior to adding the noodles); 2) sautéed veg (mushroom, bite-sized broccoli, kale) and crispy tofu mixed in once you add the noodles; and 3) on top: a sliced soft-boiled egg, avocado, seaweed snack strips, and green onion. It takes a little bit longer but is worth it, especially for a more filling meal, like dinner.

Instead of brown sugar I would try hoisin sauce. You’ll get that sweetness without it overpowering everything. If it were me I would do hoisin, soy sauce, garlic, and add some green onions at the end. You can either do sriracha to add a kick at the end or add some red pepper flakes to the sauce as you’re cooking it. Just depends on personal preference at that point.

Tip for poaching ur egg in ur ramen. When you've got about 30 secs left of ur noodles cooking, crack ur egg in and immediately cover the pot with a lid. I've been doing that for years and it's perfect. My go-to ramen personally is a shin ramen pack mostly drained and a dash of milk. Then add cheese, siracha, and a poached egg. If I've got veggies I always add them too. Also, yes to cheese in ramen. It's so good and a Korean way of eating it I believe.

When I was in college, I was a resident assistant. We had to do 4 programs every semester for the students. One year, I made a Cheap Chef Cookbook for the dorms. There was a whole chapter dedicated to ramen. One of the weirdest recipes (submitted by a student) was a Ramen sandwich. They would basically cook the ramen to barely soft with as little water as possible, then sprinkle the flavor packet on it and place it between 2 pieces of bread with mayo and cheese. I was never brave enough to try it, but I did include it in the cookbook. That was one of the biggest hits and from what I have heard, other RAs have added to it and make a staple every year.
