Texas chili can have beans. I have made chili from a paperback cookbook from 1965, by Walter Jetton, caterer to the LBJ ranch of President Lyndon B. Johnson. “Pegleg Shorty’s Chili” is nothing but lean beef, fat, water, and a list of spices. Immediately following in the book is “Shorty’s Chili Con Carne” which is simply the addition of BEANS. It seems that if beans were okay for LBJ’s caterer, they should be good enough for Texas. Leading a healthier lifestyle, I now make chili regularly, but with tons of beans because they’re one of the healthiest foods you can eat…certainly much more so than beef. LBJ died at age 65, no doubt a combination of stress and that heart-killer Texas cuisine.

@@klawiehrI think you’re confused. Yes, “con carne” means “with meat” … not “with beans.” The phrase Chili con carne would suggest that MEAT has been added to the basic chili recipe. Chili with beans would be called “Chili con Frijoles.” A Chili con Carne recipe can, but doesn’t necessarily include beans.

No I was born here, wasn’t even born in Texas, but I adopted Texas and Texas adopted me from the first time I ever saw it. Texas may not be on my birth certificate but im as Texas as it gets. LoL

Thank you so much you’ve made my day, my week, my year. You have taken me home. I don’t actually live in the town I’m 9-10 miles out. It’s not for everyone but it’s the most beautiful place on earth to me and I’ve been around this world many times. This is my all time favorite video you have ever or will ever do and I appreciate it so much. As I’m sure the fine people of Terlingua do as well. It’s a little quirky but so are we. I’ve been in every one of those shops, buildings , stores at one time or another. And a couple of them were regular at least once a week. The restaurant is great especially when you’re tired of cooking for yourself or eating your buddies cooking too. LoL and the bar there is a refreshing water hole on a hit day or anytime as we. Also have stayed in several of the different places you can rent but just for a weekend especially at the chili cook off. And if you have never been to it I suggest you give it a try you won’t be disappointed. My buddies and I call the last little town goatville LoL and Mayor Henry could serve as a model for some real life politicians in my opinion. LoL. Even though I’m gone right now I will never leave this place, eventually what’s left of me will be in that cemetery with my people. Thank you Joe for doing this one, you have no idea what it means to me I truly appreciate it. Safe travels my friend and keep filming I’ll keep watching.

Hello from New Zealand. We did a boys trip through the US April 2023 and spent a night in Terlingua on our way from San Antonio to El Paso which was a highlight of the trip. The drive was magnificent with stunning scenery. We did et buzzed by a Border Patrol Chopper though. Love your videos, keep up the great work.

Terlingua was our "headquarters" when we explored the Big Bend country of Texas. Also, when we went to Presidio, we took the road that somewhat follows the Rio Grande. We went as far East as Langtry, Texas. I really like that part of Texas including Fort Davis, Alpine and the observatory.

This entire group of videos is literally my stomping ground. And my home is a little ways out of the town of Terlingua. It’s a great place and the weather is great for a guy with a lot of metal parts holding him together.

My wife and I had never been to the Terlingua chile cookout till last year. We stayed with some friends of our who have a house 14 mile away. It's beautiful country. I remember years ago hearing that the winning chili was buzzard breath chili. About 30 years ago I was talking with a young man that got so drunk at the cookout he wandered off into the desert and fell down a mine and landed face down and one of his eyeballs popped out of socket still connected to his brain. He said he saw light staight up while face down. He said he didn't loose consciousness and no broken bones. He was found and no major injuries probably because he was so drunk....Only in Texas

We found Terlingua by accident. We were rving cross country and needed a place to park our coach to visit Big Bend National Park and they have an awesome rv park in town. The food and hospitality around town was second to none. We will definitely stop back when we are in the area again.

I visited Terlingua several times in the late 1970's because I was playing music with Kent Finlay (the poet laureate of all things Texas Chili). Kent wrote the definitive song regarding the "Chili: beans or no beans?" controversy. The song was "If You Know Beans About Chili, You Know That Chili Has No Beans" If you know beans about chili You know it didn’t come from Mexico Chili was God’s gift to Texas (Or maybe it came from down below) And chili doesn’t go with macaroni And dammed Yankee’s don’t go with chili queens; And if you know beans about chili You know that chili has no beans - Ken Finlay 1976

Another big business was the gathering of creosote bush from the desert. Huge bundles would be tied to the back of burros. Packs of wild burros were very common in the area when we used to go there back in the 80's. If you do make it there you will see the ruins of very small adobe structures, smaller than most modern living rooms. That tiny structure usually housed an extended family. At night only the women slept in the house, the men slept outdoors, often on the roof.

I’ve been there. Drove past it going into BB. The scenery out there is unreal. It is well worth the 8.5 hour drive from the Houston area. Big Bend is off the chain cool!

I personally like a few beans in my chili because I like the texture and a bit of extra fiber is a good thing, but the meat needs to be the star of the show. I wouldn't want to be the poor sap who has to clean the port-a-potties after the Terlingua chili cookoff...

Our older cousin was a trucker, he came home from Texas claiming he got this from a roadside diner. Make pancakes, make some chili, put chili on pancakes top with cheese. YUMMY. Everyone I make it for is hesitant to try. But everyone that tries it, their hooked. YUMMY.

Joe actually there are two Chili Cookoffs that take place each November (1st Saturday). They are across the road from each other. Temps. down there can hit 120 in Summer! One of the greens on the Lajitas course is on an island in the river.

Have to put that Chili Cookoff on my bucket list.. FYI... Coins left on a headstone are a way to show respect to the deceased and to let the family know that someone visited: Pennies: A penny means that someone visited the headstone. Nickels: A nickel means that the visitor and the deceased veteran trained together at boot camp. Dimes: A dime means that the visitor and the deceased veteran served together in some capacity. The practice of leaving coins for the dead dates back to classical antiquity, when people believed that the dead needed coins to pay a ferryman to cross the river Styx.

Terlingua reminds me of the little town on the movie called tremors. It looks like perfection valley .Btw did you know that a murder happened in that town on February 4 2014? A guy named Glenn Felts who was the owner of the bar called La Kiva was killed by his friend Tony Flint. I googled the town and found out about the murder.

Things are fixing to change along the border my friend! With todays crossings they stick closer to the ports of entry so they dont have to mess with the harsh conditions of the Texas southern border. They wait to be picked up and serviced.

I loved this video. Great history about Texas Chili. HEB makes a great Texas Chili that we use on Chili Dogs. I highly recommend it if you are near an HEB. Chili was invented in South Texas near San Antonio. So I am with you Joe it IS a Texan food. This video has beautiful scenery, and great colorful quirky places to stay at. The golf course is beautiful and seeing the Texas Big Bend is wonderful. Many British folks are considering Texas as their vacation destination. My friend's daughter who lives in SLC had her friend from the UK meet her in SA and among other places in Texas just visited the Big Bend where you are at. There is lots to do in Texas. See if you cannot do the bat caves in the hill country near SA on FM 3009 this coming spring when the bats return from Mexico. It is the largest bat colony in the world and takes over 3 hours to empty out each night. All the bats are female as it is a nursery. If you like Tequila thank a bat as they eat the bugs that would ruin the plant that Tequila is made from. Again I really enjoyed this episode. It is one of your better offerings and is one of my top ten for your channel. This one was just plain FUN!

I was reading about a high end chili contest and was surprised the contestants used dried onion and garlic powder. Reason? Chili was a cattle drive, cattle ranch dish. There were no fresh tomatoes, onions etc. They had beef, dried chilis and salt and maybe a few other dried items like onion powder. I make my own chili powder but most often do use beans. They make the dish far more economical to produce, add health benefits and sweetness as well.
