Lol you can keep and eat a sturgeon of any size. He charges by the size of the sturgeon. We are in Idaho and it’s not legal to keep or eat any sturgeon, except at this PRIVATE POND. He has a license and allows you to purchase them to eat, but they are spendy. I go here every summer and ITS A BLAST!!

Looks like a fun day. I personally find that sturgeon is best cook when cut cross grain after filleting into 3/8 inch "steaks". the fish cooks quickly and is more tender. Give it a try.
