You can make with vanilla wafers or saltine crackers and sweet and condensed milk. There are so many variations. I love my mom’s 30 pound fruit cake with all the candied red and green cherries, and pecans. That is all that is in it except the flour and fixings. An alcoholic beverage is poured over a cheesecloth to moisten it for a couple of weeks before we cut it on Christmas Day. It is the BEST Fruit Cake. My husband would never eat fruit cake until he ate my Mom’s. And no, you don’t get drunk on it. It just moistens it and is a preservative. My mom cooks I around Thanksgiving and add a little alcohol over I once a week.

So many good recipes and sweet memories., she would make this and make mini loaves for our elementary teachers, some 50+ years ago. She was a treasure, thanks for sharing!

Mrs.Tammy, my granny and mom would always make fruit cakes at Christmas for all of us grandchildren. My sweet granny had 13 children! And she wouldn't have money to buy gifts for all her children and their children so, she always made fruit cakes for each family. Looks so good! My mom made an ice box fruit cake and this was her recipe... Ice Box Fruit Cake 1 lb. marshmallows, melted 1 box vanilla wafers, crushed 1 small can coconut 1 can condensed milk 3 small bottles of cherries Nuts as you like Mix all ingredients & put in refrigerator overnight. Wrap in tin foil or wax paper...

my mother made this without fruit except raisins and without the cherry juice - she used marshmallows and whole milk and pecans - no butter of any kind -- it was much better than store bought fruit cakes - and butter or especially margarine is not very healthy at all -- it really didn't taste like they do at all - but it was very good - more like some kind of cookie or bar stuff - it was delicious -- yu may like trying that one - it was quite unique at Christmas time - I have had every kind I can find to try and or buy - they are not nearly as good as the one she made without all the other stuff - she kept hers in a Pyrex glass container in the fridge - 70 years later i still crave it -- ahahaha - i would think they have it on yutube - I have it anyway - i still make it at that time - and other times also - ahahahaha - I put every nut and seed I can get ahold of in mine -- ahahaha - cranberries sometimes even - for that twang they give after they are soaked in exotic rum for a couple of days --- hehehehehehe - I never try to do the exact same thing twice -- ahahaha - I am from the Hippie generation - so life is different for me -- hehehehe - just ask if needed - I like cherrys - I may just soak some of them -- hahahahaha

Love this! My Dad’s sister always made him one for Christmas. She put hers in a wax paper lined shoe box and Daddy kept it in a cool walk-in closet on a card table! I remember so well going in there with him to get a slice! Delicious! Thanks for the recipe!

I have been making an icebox fruitcake with vanilla wafers and Eagle Brand milk for 40+ years. My daughter asks for it every year. I think it's more like candy than cake 😋. Now I'm going to have to try yours (even tho I detest marshmallow) ... LOL ... Here's my recipe: Vanilla Wafer Fruit Cake 1 lb. box vanilla wafer (crushed) 1/2 lb. candied cherries (halved) 1 qt. pecans (chopped) [about 3 cups] 1 lb. white raisins 1 can Eagle Brand Milk Mix all together and press into a foil-lined pan. (I use the small disposable loaf pans) Refrigerate.

This cake is very close to our family ice box fruit cake but with a few differences. There were three of us kids, so mom sat us down around thanksgiving and gave each of us a pair of scissors and an ingredient to cut up. Marshmallows, only the large ones, pitted dates, cherries, the kind in the bottle with liquid. She drained the cherries and saved the juice . Then she used a rolling pin to make crumbs out of a whole box of graham crackers. when we all had our ingredients ready, they were combined in a large bowl, using the cherry juice,the graham cracker crumbs and the cut up marshmallows, cut up dates and cut up cherries. This was a sticky mess. But then she made three logs out of it and rolled each log in more dry crumbs. She the rolled each log in wax paper and refrigerated them until Christmas. It took that long to dry out enough to slice. Before she served them she decorated each one with cut up candied cherries to look like poinsettias across the top. I once tried to make it with miniature marshmallows and it didn't work. You need the cut ones to help hold it together.

We make this with a can of sweeten condensed milk instead of the marshmallows. Also we lined the graham cracker box with foil or waxed paper and packed the cake back in the box. Refrigerate. And oh so Yummy!

My Mother made a fruit cake similar to this every Christmas. When she passed away we didn’t know how to make it. Years after her death I came across the recipe. My brothers and sister were so happy. In Moms recipe you add spices cinnamon, nutmeg,cloves and ginger, candied fruits, candied cherries ,dates and nuts. This is why I love your channel because you truly do cook like Momma Did! Our recipe called for 1 lb. Graham crackers (finely crushed), 1 c. Carnation evaporated milk, 30 marshmallows, 1 lb. mixed candied fruit (cherries & pineapple), and 1 lb. chopped nuts. Heat the canned milk & melt marshmallows in it. Coat the fruit with some of the cracker crumbs so they won't stick together and mix all ingredients together. We used to line the cracker box with waxed paper and pack the cake inside to form (I think we cut it in half top to bottom so it would make 2 small loaves). Refrigerate for at least 3 days before slicing and eating. Yum! This is a good alternative recipe for those who like the candied fruits or have some to use up, like me.

I use the graham cracker box lined with wax paper and press the dough into it. cover with wax paper and the lid of the graham cracker box. Let it sit 2/3 days. Serve.

I meant to ask did you just stored it in the fridge or freezer until it sets up. I’ve got everything to start putting this together tomorrow, & you did say 4 hours. My Mom she always put hers 6 weeks before Christmas. That’s all I ever wanted for Christmas & see what she going to make me every year and what she was going to fill my stocking with. It was always special & that’s the best Christmas memories is just that and know that I was loved & that I was loved because I was adopted and she always made Christmas the greatest treasuring only stored in my mind & heart ❤️. I miss my Mama everyday especially during the holidays, she also made my Easter basket to, I can’t help but to always remember I was just someone else’s child but I always thought of her as my mother God gave me the best treasures from a Mama & I’m certain when I see her again she will have everything I treasured the most was her love ❤️🙏✝️. Also can I use foil to wrap it or plastic wrap then foil. Thank you Tammy for sharing a little bit of Heaven through our Moms, Miss Tammy forgive me my brain doesn’t seem to want to play catch up with me anymore. I am not just body tired but brain tired
